Amazing chocolate honey cake with prunes. Step by step recipe

  1. In a deep bowl we put sugar, sand, natural honey, butter, cut into small pieces, cocoa powder and pour the milk.
  2. Then we put the bowl in a water bath.
  3. Tip. We do the water bath like this: pour some water (about ¼ of its volume) into the pan, bring the water to a boil and put our bowl of food on top. It should cover the pan completely. And boiling water should not touch the bottom of the bowl.
  4. Constantly stir the contents of the bowl with a spoon.
  5. When the mass becomes liquid and homogeneous, add baking soda to it. We continue to heat the mixture and stir it constantly.
  6. With the interaction of soda and natural honey, a foaming process will occur. So: the mixture must be heated until this process stops. This usually takes 5-7 minutes.
  7. Then remove the bowl from the water bath. Let the mixture cool for a couple of minutes.
  8. Add one chicken egg to the mixture. Mix.
  9. Sift the flour through a sieve and mix it with a baking powder.
  10. Now add the flour to the bowl in parts. Knead the dough. First, do it with a spoon, and then continue with your hands. The dough should not stick to either the hands or the walls of the bowl.
  11. We divide the finished dough into 8 identical parts.
  12. We round each piece and roll it out very thinly with a rolling pin in a circle with a diameter of 24 centimeters. It is best to roll each piece of dough on a separate sheet of parchment.
  13. Tip: if in the process the dough sticks to the rolling pin, then you can grease the rolling pin with vegetable oil or sprinkle the dough with flour.
  14. In several places we pierce the rolled cake with a fork so that the dough does not swell during baking.
  15. We shift the cake with the parchment onto a baking sheet and send it to the oven preheated to 180 degrees for 7-8 minutes.
  16. We transfer the finished cake to the table and while it is hot (and soft) we give the cake the desired shape: I suggest making a cake diameter of 24 centimeters. Trim the cake to the side.
  17. We spread the cake on a tray or dish and grease it with 10% cream with a brush.
  18. Thus, bake all the cakes.
  19. Slices of dough from all the cakes are sent to the oven for another 5 minutes, so that they become more fragile. And then grind them into crumbs, which in the future we will decorate chocolate-honey cake.
  20. Now let's do the cream.
  21. In a deep bowl or bowl of the mixer, send the sour cream and begin to whip it.
  22. Gradually add the icing sugar and continue to beat with a mixer until a thick, stable cream is obtained.
  23. Tip: so that the cream turns out to be thick and does not spread in the cake, sour cream should be chosen the most fat. Such sour cream beats well.
  24. Pour the prunes with hot water and leave to steam for 10 minutes (thanks to this, it will become soft), then cut it into small pieces.
  25. We grease each cake with sour cream and lay out sliced prunes in the middle.
  26. The top of the cake does not need to be greased with cream.
  27. Also, grease the sides of the honey cake with sour cream.
  28. We send the cake to the refrigerator.
  29. In the meantime, let's make chocolate glaze.
  30. In a small stewpan, send two tablespoons of cocoa powder, sugar, hot water,
  31. We put the stewpan on a slow fire and, with constant stirring, heat until a homogeneous mixture - and until it thickens. By consistency, it should resemble melted chocolate.
  32. Remove the stewpan from the heat and add oil to it. Stir to completely dissolve the oil.
  33. We take the chocolate-honey cake from the refrigerator and evenly cover its top with chocolate icing.
  34. Sends the cake to the refrigerator so that the icing grabs a little (5-10 minutes are enough).
  35. Then we decorate the sides of our cake with prepared crumbs.
  36. The top of the cake, if desired, can be decorated with whole seedless dried prune berries.
  37. Let the cake soak for 3-4 hours. Most often, I leave it to soak for the whole night: then the cake is especially tender.
