Amazing Custard Buns

I advise everyone to cook the perfect pastries: amazing buns with custard. Buns made of yeast dough: very tasty, fragrant and tender (thanks to custard) - a great start to a hard day if you serve them with a cup of aromatic coffee. Excellent dough: soft, airy inside, and with a crispy crust - the hand itself reaches for a new portion, it is simply impossible to resist. I advise everyone to cook rich buns with custard according to this recipe: you will not regret it.

Ingredients:

For the test:

  • 250 grams of flour;
  • 10 grams of fresh yeast (or 4 grams of dry);
  • 80 milliliters of milk;
  • 50 milliliters of water;
  • 40 grams of butter;
  • 1 chicken egg (you will need 1 teaspoon in the dough);
  • 0.5 tablespoon of sugar;
  • 0.25 teaspoon of salt.

For custard:

  • 50 grams of sugar;
  • 1 chicken egg;
  • 10 grams of butter;
  • 20 grams of corn starch;
  • 160 milliliters of milk;
  • 1 teaspoon of vanillin.

For coconut shtrezel:

  • 20 grams of sugar;
  • 20 grams of wheat flour;
  • 7 grams of coconut flakes;
  • 15 grams of butter.

Amazing buns with custard. Step by step recipe

  1. For the test, mix water with milk (in a pan or saucepan) and heat a little: the mixture should be warm, but not hot.
  2. Add sugar to fresh yeast and mix well (grind) with a spoon. It turns out a liquid consistency.
  3. Pour milk and water into the yeast mixture and mix until completely dissolved. Leave in a bowl for 5 minutes.
  4. In a separate bowl, beat one chicken egg with a fork.
  5. In a deep bowl (we will need it for kneading the dough), transfer the butter at room temperature, add salt (according to the recipe) and a teaspoon of beaten egg.
  6. We will use the remaining egg to grease the buns.
  7. Pour half the flour into the bowl for the dough (according to the recipe), mix the ingredients, pour in the yeast mixture.
  8. Mix everything well and start adding (in parts) the remaining flour. Flour may need a little more (or less) than a prescription.
  9. Knead the dough with your hands for about seven minutes. Ready-made dough for buns should be soft, elastic and pleasant to the touch.
  10. Round the dough into a bowl, transfer to a bowl, cover with cling film and leave warm for 2-2.5 hours.
  11. During this time, knead the dough several times (approximately every 3-40 minutes).
  12. While the dough is coming, we prepare the custard.
  13. Beat the egg with a fork, add sugar, vanilla sugar and starch to the bowl. Mix well.
  14. Bring the milk to a boil and pour it into the egg mixture with a hot, thin stream.
  15. Pour the resulting mixture into a saucepan, put on the stove.
  16. With constant stirring, cook for 5-7 minutes: we need the cream to become thick.
  17. Whip the finished cream for several seconds with a mixer: until it becomes smooth and uniform.
  18. In a saucepan with cream, add butter (according to the recipe), and mix everything thoroughly.
  19. Transfer the custard from the stewpan to the plate and cover with cling film. Leave to cool.
  20. We will prepare a confectionery sprinkle for decorating buns: coconut shtreisel.
  21. Put butter at room temperature in a bowl, add coconut flakes, flour, sugar, and grind everything with your hands. We collect the resulting dough in a lump, wrap it in cling film and put it in the freezer.
  22. We divide the finished risen dough into 10 approximately equal parts, round each of them, cover with a film and let stand for 10 minutes.
  23. We roll each piece into a long narrow layer, on one (long) side we spread custard. You can watch this process in more detail in the video under the recipe.
  24. We turn the strips into a tube, put them on a baking sheet covered with parchment paper.
  25. In those places where the buns are in contact, grease them with odorless sunflower oil.
  26. Cover the buns with custard and cover with cling film and leave them to stand for 30-40 minutes.
  27. Shtreyzel (we need only half) rub on a fine grater. The remaining part is removed in the freezer until the next time.
  28. Lubricate the buns with custard chicken egg (we have it left after making the dough) and sprinkle with coconut crumbs.
  29. We put a baking sheet with buns in the oven, preheated to 190 degrees. We will bake for 30-35 minutes: the baking time and temperature depend on the characteristics of your oven.
  30. Ready buns let cool slightly, separate from each other and serve.
