American pumpkin pie is very tender, tasty and healthy. Even the most avid "not amateur" pumpkin will want to try a slice of such a pie. Sand base and cream filling with a slight aroma of cinnamon and vanilla. Just imagine: I bit off a slice of such a pie, and there is a crispy dough and cloudy tender top, which itself has melted in the mouth. I can’t call this recipe classic, but tasty - that's for sure!

Ingredients:

  • peeled pumpkin - about a kilogram;
  • flour - 400 grams;
  • butter - 250 grams;
  • 3 eggs;
  • sugar - 200 grams;
  • cream - 200 milliliters;
  • a small pinch of salt;
  • a teaspoon of vanilla sugar;
  • cinnamon to taste.

  1. Let's start making the cake with the preparatory work: be sure to sift the flour. (Do not ignore this rule, often because of the wholemeal flour, pretty dry pies are obtained). Thus we make pies more airy.
  2. Then grind room temperature oil with flour into crumbs.
  3. Beat one egg and add it to the dough. Knead the soft dough, wrap in cling film and refrigerate for an hour.
  4. Meanwhile, prepare the filling: peel the pumpkin and seeds, finely chop.
  5. Put the pumpkin in a saucepan with a thick bottom, add some water and cook the pumpkin until soft.
  6. Using a blender, grind the pumpkin to a puree state. I grind it through a sieve, but you can use a blender to speed up the process, I think it will not affect the taste.
  7. Now we’ll go back to the test: sprinkle the table with flour, roll the dough into a circle. For baking, I used a mold with a diameter of 30 cm.
  8. Grease the mold and put the dough in there, forming the sides.
  9. Send to bake in an oven heated to 190 ° C for 15 minutes.
  10. While the base is baked, we will return to the filling: pumpkin puree must again be whipped with sugar, cream, cinnamon, vanilla, eggs and a pinch of salt.
  11. When the dough is baked, put the pumpkin mass on top and send back to the oven for 50 minutes, at a temperature of 180 ° C.
