I haven’t been to Vienna and haven’t tried a real Viennese strudel, but I want to offer you to make your own homemade apple strudel. The recipe is very simple, the taste is incomparable. A fairly airy crispy pastry, with a juicy and aromatic apple filling, will plunge you into the real world of bliss. Please do not judge strictly, perhaps my homemade strudel recipe is different from the classic, but it is so cool. With all my heart I advise you.

Ingredients:

Dough:

  • water - 1 cup;
  • a pinch of salt;
  • apple vinegar - 20 grams;
  • vegetable oil - 30 grams;
  • flour - 2.5-3 cups.

Filling:

  • apples - 4 medium;
  • breadcrumbs - 2-3 tablespoons;
  • butter - 80 grams;
  • sugar - 100 grams;
  • lemon - 1 piece;
  • cinnamon to taste;
  • raisins.

How to make apple strudel at home. Step by step recipe

  1. Pour flour into a slide, make a small depression, add a little warm water, then vegetable oil and vinegar. Remember to add a pinch of salt.
  2. Knead the dough, adding flour if necessary. It should turn out elastic and not stick to your hands.
  3. Wrap the dough in cling film, let it lie warm.
  4. Sort the raisins, pour hot water for 15 minutes. Then drain the water.
  5. Fry the breadcrumbs in butter.
  6. Squeeze the juice from the lemon.
  7. Peel the apples and cut them into cubes.
  8. For apples, add lemon juice, sugar, cinnamon to taste, raisins and breadcrumbs. Shuffle.
  9. Divide the dough into two parts.
  10. Sprinkle the table with flour and roll out the dough as thin as possible. After greasing your hands and dough with vegetable oil, slightly stretch the dough with your hands. The finer it is, the more crispy the pastries will be.
  11. Lay out the filling, distributing evenly over the entire circumference of the dough.
  12. Roll the dough roll, pinch the edges. As you already understood, these rolls will make two rolls.
  13. Cover the baking sheet with parchment paper, put the rolls, a little grease them with melted butter.
  14. Bake for about 30 minutes at 180 ° C. As soon as the dough is browned, take out the strudel, do not overdry it very much.
