Ingredients:

  • sugar - 2-3 tablespoons;
  • eggs - 2 pieces;
  • wheat flour - 2 tablespoons;
  • a pinch of salt;
  • vanilla optional;
  • jam for the filling.

Sponge cake. Step by step recipe

  1. Initially, to prepare the biscuit, we separate the proteins from the yolks in the eggs.
  2. It is very good to use fresh homemade eggs for home baking: as for me, baking then turns out to be more tender and soft.
  3. Add sugar to the yolks (according to the recipe), a pinch of salt and beat the yolks with sugar until white with a mixer.
  4. If I use sweet jam for impregnation of biscuit, then sugar I take two tablespoons, and if the jam with sourness - three tablespoons.
  5. Sift wheat flour for biscuit roll.
  6. Add flour to the yolks, mix everything well until smooth.
  7. Sugar yolks should be of consistency such as thick sour cream. You may need a little less flour than the prescription. It all depends on the size of the eggs that you use to cook.
  8. In a separate container, beat the whites well until white foam (I whip the whites with a mixer).
  9. Then, in small portions, add whipped proteins to the yolk mass and mix gently. If desired, vanilla or vanilla sugar can be added to the dough to taste: but I do not add. The dough for biscuit roll is ready.
  10. When we introduce whipped proteins into the yolk mass, then you need to mix slowly, along the contour, and then from the bottom up.
  11. Cover the baking tray with baking paper.
  12. I have a small baking tray for biscuit: approximately, like a sheet of A4 paper. But the main thing is that the baking sheet that you will use is rectangular in shape.

The readiness of the biscuit is determined by its color and using a toothpick (or wooden stick). If you are afraid that the biscuit roll may burn during baking, bake at a temperature of 170 degrees.
  18. Separate baked biscuit from parchment.
  19. Smear homemade sponge cake with apricot jam.
  20. For this roll, you can use any jam: very sweet or with a slight acidity. Jam for impregnation of biscuit should be of medium consistency - not thick, but not very liquid.
  21. Wrap the soaked warm biscuit in the shape of a roll. When the biscuit is warm, then rolling it into a roll will not be difficult for you. The biscuit turns out to be very soft, tender and supple.
