I offer a simple recipe for an amazing carrot raw food cake: this dessert is prepared without sugar, flour, eggs and pastries. None of the ingredients undergo heat treatment, which means that it retains all the useful vitamins and properties that we need so much. The cake is very tender, fragrant and beautiful. It is so tasty that no one will even guess that carrots are in the composition. It does not spoil the taste at all, but gives the dessert a richness and a beautiful color.


The foundation:

  • 1.5 cups of oatmeal (grind oatmeal in a coffee grinder);
  • half a glass of coconut flakes;
  • half a teaspoon of cinnamon;
  • 2 large carrots;
  • 1 cup pineapple;
  • 1 glass of dates;
  • sweetener (agave syrup or honey) - to taste.


  • 2 tablespoons of coconut oil;
  • 300 grams of cashews (soak in water overnight);
  • juice of half a lemon;
  • sweetener (agave syrup or other sweetener) - to taste.

Carrot raw food cake. Step by step recipe

  1. First you need to prepare cashews in advance: it must be soaked in water for the night.
  2. Let's make a cream. We take cashews soaked in water, add lemon juice, coconut oil, agave syrup (you can also take another sweetener) and beat with a blender or a kitchen machine until smooth.
  3. We will prepare the basis. We take a carrot, wash it, peel it, cut it into circles and grind it with a blender or kitchen machine.
  4. We add chopped pineapple, cinnamon, oatmeal, coconut, dates to the carrots and chop everything with a blender or kitchen machine.
  5. We proceed to the formation of the cake. We take the form, which is best detachable, and lay out half of the carrot mixture, distributing it evenly.
  6. On top of the carrot mixture, spread the third part of the cream, also evenly distributing, and put in the freezer until the cream completely hardens.
  7. On the hardened cream, evenly spread the second part of the carrot mixture and again put in the freezer until it hardens.
  8. Then remove the detachable form, grease the top and sides of the cake with the rest of the cream.
  9. You can decorate the cake with walnuts.
