My friend shared with me a recipe: how to quickly and easily make chewing marshmallows at home. Vanilla marshmallows are very soft, delicate, sweet and airy. Such a tasty dessert is a purely children's pleasure, but adults will not refuse such a treat.
I propose to cook home-made marshmallows with "Very tasty."
- 250 grams of sugar;
- 150 grams of invert syrup;
- 24 grams of gelatin;
- 75 to 80 milliliters of water for gelatin;
- 120 milliliters of water for syrup;
- one teaspoon of vanilla extract;
- 30 - 50 grams of powdered sugar;
- 30 to 50 grams of corn starch.
Chewing marshmallows at home. Step by step recipe
- First of all, to prepare chewing marshmallows, you need to pour 24 grams of gelatin with water and leave the gelatin to swell (you can use sheet gelatin, but powder is more suitable for preparing our marshmallows).
- When the gelatin swells, it will be necessary to warm it in a water bath (you can do this in the microwave, only in several stages) until completely dissolved, only in no case should the gelatin be overheated
- Pour the melted gelatin into the whipping bowl, add half of the invert syrup (the recipe for the preparation of invert syrup can be found on our website, and you can also replace it with glucose syrup or corn syrup) and beat.
- Pour sugar into the stewpan, add the second part of the invert syrup, water and put the stewpan on medium heat, stirring until sugar is completely dissolved. When the syrup begins to boil, then bring to a temperature of 112 - 114 degrees (measure the temperature with a thermometer) and remove from heat.
- In parallel, beat gelatin with syrup using a mixer.
- Pour syrup into a whipping bowl with a thin stream and increase the speed of the mixer to medium, and then set it to maximum. Beat to a white, airy and strong mass.
- At the end of whipping, add the vanilla extract (you can add another extract: lavender, orange).
- We cover the square shape (I took the shape of 23x23 cm) with parchment paper and spread the airy mass in it, evenly distributing it in shape (all this must be done without slowing down, because the mass quickly freezes).
- A small amount of the mass is transferred to the cooking bag and planted on parchment with long strips (you can then cut small chewing marshmallows from them).
- Combine icing sugar and corn starch. Mix well and sprinkle with this mixture the mass (in the form) and strips.
- Leave to solidify at room temperature for 12 hours.
- We remove the mass from the mold and cut the layer into cubes with a sharp knife (a table, hands and knife should be well sprinkled with a mixture of powder with starch so that it does not stick to the hands). With strips we do the same.
Homemade chewing marshmallows are airy, resilient and just melt in your mouth. Little marshmallow can be added to a cup of coffee - this is a heavenly pleasure.
