Once I was ordered a birthday cake and I did not come up with anything better than the classic royal cake - and I did not lose it. After all, lush cakes, a variety of tastes, combined with a delicate sour cream, is the best option for a festive event. The cake turns out to be high and beautiful - it can become a wonderful birthday masterpiece for dessert. Try to cook you too: I'm sure you will like it.


For the test:

  • wheat flour - 350-400 grams;
  • sugar - 400 grams;
  • chicken eggs - 4 pieces;
  • sour cream - 500 milliliters;
  • soda - 20 grams;
  • vinegar 9% - 15 milliliters;
  • ground black pepper - 1 pinch;
  • raisins - 100 grams;
  • cocoa powder - 15 grams;
  • poppy - 80 grams;
  • walnuts - 100 grams.

For cream:

  • homemade sour cream - 800 milliliters;
  • icing sugar - 200 grams;
  • vanilla to taste.

The cake is royal classic. Step by step recipe

  1. First, prepare cakes for the royal cake. Using a mixer, beat the eggs with sugar into a lush foam until light.
  2. In the egg mass, add sour cream, soda quenched with vinegar, and whisk again.
  3. Add flour to the whipped mass in portions and continue whisking until smooth.
  4. Ready dough for a classic royal cake should acquire the consistency of thick sour cream.
  5. Divide the dough into four equal parts.
  6. And in each of the parts we add the following ingredients: in the first - cocoa powder; in the second - raisins; in the third - poppy; and in the fourth - walnuts.
  7. A round detachable shape, with a diameter of 24 centimeters, is covered with parchment paper and greased with oil.
  8. Pour one of the parts of the dough for the royal cake and bake at a temperature of 180 degrees for about 15-20 minutes.
  9. We also bake all the other cake layers: with nuts, raisins, poppy seeds and chocolate.
  10. We check the readiness of the cakes with a wooden stick, piercing the cakes: it must remain dry and clean. Then the cake is ready.

  12. We proceed to the preparation of the cream: for this, pour the sour cream into a deep container. Add the icing sugar and vanillin, whisk everything thoroughly with a whisk.
