I share with you a simple and proven recipe: unusually delicious custard cakes. Their preparation will take a little time, while they will become a real decoration of any table - even a festive one. To give a custard cake a festive look, you can pour a thin stream of delicious icing on them. Eclairs are stored in the refrigerator for up to 5 days and at the same time do not lose their taste.



  • sifted flour - 130 grams;
  • water - 200 milliliters;
  • fresh chicken eggs - 4 pieces;
  • butter - 125 grams;
  • a pinch of salt.


  • warm milk - 400 milliliters;
  • flour - 2 tablespoons (with a slide);
  • sugar sand - 180 grams;
  • butter - 100 grams.


  • sugar sand - 6 tablespoons;
  • cocoa (powder) - 4 tablespoons;
  • milk - 4 tablespoons;
  • butter (room temperature) - 100 grams.

Custard cakes. Step by step recipe

  1. Let's start by making custard dough. Pour one glass of water (200 milliliters) into the pan, add 125 grams of butter and a pinch of salt to it. Bring everything to a boil.
  2. Then add 130 grams of flour, continuing to cook, while stirring vigorously until a homogeneous mixture (I cooked for one and a half minutes).
  3. Tip: the resulting mass cannot be too thick, otherwise the cakes will not rise.
  4. After this, the dough should be cooled to a warm state.
  5. Add four eggs to it (one at a time), each time thoroughly kneading, until the dough becomes homogeneous.
  6. Tip: if the eggs are small, then it is better to take five pieces.
  7. We cover the baking sheet with parchment and use a teaspoon to spread small balls at a small distance.
  8. Tip: it is better to lay them in a checkerboard pattern so that they bake evenly.
  9. We bake the cakes for twenty minutes at a temperature of 200 degrees, then, reducing it to 160 degrees, dry for another 10 minutes.
  10. Tip: Do not open the oven door during baking, as the cakes will fall.
  11. Now prepare the custard: put a glass of sugar (180 grams) and two tablespoons of flour (with a slide) in a saucepan, pour two cups of warm milk (400 grams). Cook over low heat until thickened. After the cream has cooled, mix with 100 grams of butter and cool it in the refrigerator for several minutes.
  12. There is another delicious recipe for air cream: its preparation is simple, the ingredients are available to everyone.
  13. We need: 220 grams of sugar, 200 grams of butter (89%), one egg, 1 cup of cream (150 grams, with a fat content of at least 20%).
  14. Beat a clean egg in a bowl with 220 grams of sugar.
  15. Heat the cream over low heat (you can’t bring it to a boil). Pour them into a bowl with a sweet egg mass and mix with a whisk.
  16. Pour everything into a saucepan and cook over low heat to thicken the mass (for the flavor, I drip a little vanilla essence). Leave to cool.
  17. Beat 200 grams of butter until white. Add the contents of the pan to it and beat everything with a mixer - until you get air cream.
  18. We proceed to the preparation of the glaze. Mix six tablespoons of sugar, four tablespoons of cocoa, 100 grams of butter and four tablespoons of milk. Cook everything over low heat, stirring constantly.
  19. Using a pastry bag, fill the resulting eclairs with cream, then fill each cake with icing (you can take a regular bag for this, cutting off the tip of the bag with scissors).
