Ingredients:

  • 100 milliliters of water;
  • 65 grams of sugar + 130 grams per egg;
  • 5 chicken eggs;
  • a couple of tablespoons of cocoa (about 30 grams; you can not use it at all);
  • 2 tablespoons of gelatin;
  • a pinch of citric acid;
  • 2-3 chocolate bars (for decoration).

Among the main components of a homemade candy recipe for bird milk are three ingredients: eggs, gelatin and sugar. The rest of the products on the list you can use as you wish - to add taste.

Very tasty bird milk sweets. Step by step recipe

  1. Before preparing bird's milk, put gelatin in a separate container and fill it with water to make it swell. Stir well to remove lumps as much as possible. Leave it to stand for 40 minutes at room temperature.
  2. After time, pour the swollen gelatin into a saucepan. Then pour sugar after it.
  3. Turn the burner on to medium heat and set the saucepan. We stir: we need the gelatin to dissolve with sugar, but not boil. Remove from heat and set aside.
  4. Separate the whites from the yolks and pour them into a glass for whipping. Slightly add salt and turn on the mixer: first we set the low speed, then constantly increase it. Beat until a stable mass is formed.
  5. Then we send sugar in several approaches, and each time we beat the protein mass.
  6. We take gelatin, which should already have cooled to room temperature: and pour it into a protein mass through a strainer. After mixing the consistency either with a mixer at low speed, or with an ordinary spatula.
  7. We transfer half of the whipped mass to a separate bowl - these are Bird's milk tasty white candies. Here we add a little citric acid or freshly squeezed lemon juice, mix.
  8. Now let's quickly make chocolate-colored sweets. Sift into the remaining protein mass through a cocoa sieve, mix with a mixer until a uniform color.
  9. Next, we must put the mass in the molds: you can use special portioned forms (or a rectangular container for baking).
  10. I took the usual form and made two-tone, very tasty sweets. So, we cover the bottom with cling film, pour the chocolate mass, flatten over the entire surface. Then fill with a white mixture and smooth. Cover with a film on top, press a little so that all the air comes out. After we put the container in the refrigerator: until completely solidified.
