Delicious Chocolate Cake with Yogurt Cream

If you want to treat yourself and your family with something delicious, then the recipe for a delicious chocolate cake with yogurt cream will definitely suit you. This is one of my favorite cakes. It turns out delicate, soft and airy. And the cream does not even look like yogurt, but like whipped cream. Not a cake - a complete pleasure.

Ingredients:

Sponge cake (cast or in Polish, 18 cm, weight 1,400 grams):

  • chicken eggs - 4 pieces;
  • sugar - 140 grams;
  • wheat flour - 70 grams;
  • Cocoa - 30 grams.

Yogurt Cream:

  • natural yogurt (3-3.5%) - 280 grams;
  • cream (33-35%) - 280 milliliters;
  • gelatin (DR.OETKER) - 7-8 grams;
  • sugar to taste;
  • strawberry jam - 120 milliliters;
  • water (for gelatin) - 50 milliliters;
  • Mandarin - 1 piece.

Gelatin Syrup:

  • gelatin (DR.OETKER) - 1 teaspoon;
  • sugar - 0.5 teaspoon;
  • lemon juice - 0.5 teaspoon;
  • water - 30 milliliters.

Chocolate glaze:

  • cream (33-35%) - 70 milliliters;
  • dark chocolate - 90 grams;
  • butter - 20 grams.

Delicious chocolate cake with yogurt cream. Step cooking

  1. From the finished biscuit, cut off the top crust to even it. Cut the biscuit into 4 parts.
  2. We make a cream. You need to put gelatin in a pan, pour water and leave it on the table for 10-15 minutes to swell.
  3. We take cold cream and beat them with a mixer until traces of corollas are clearly visible on the surface of the foam. Put whipped cream in the refrigerator.
  4. I love strawberry cream, so I add “live” strawberry jam - grated strawberries with sugar. But you can make any other cream: with another jam or zest and citrus juice, and you can add frozen or fresh berries to the cream.
  5. Now we need more capacity. Pour yogurt, jam and sugar into it. Add as much sugar as you like - to your taste. But since I make jam, and it’s already sweet, I put quite a bit of sugar.
  6. Beat mixture to make it homogeneous and sugar to dissolve.
  7. Our gelatin is already swollen, now it needs to be slightly warmed up so that it dissolves.
  8. Beat the mixture with yogurt and pour a thin stream of gelatin into it.
  9. It’s time to get whipped cream from the refrigerator. They must be carefully mixed in the resulting mixture. We should get a uniform thick and airy cream.
  10. Now you can collect the cake. To make it beautiful, cover the detachable form with parchment, put the first cake and grease it ¼ of the whole cream. Smooth the cream and cover with a second cake. Repeat the process until the last cake, the fourth cake is not lubricated.
  11. We put the cake in the refrigerator until it solidifies (if you remove it for the night, it will be just wonderful).
  12. The original decoration of the cake will be a whole mandarin coated with gelatin syrup. We clean the tangerine and remove the white veins. Soak gelatin again in water for 10-15 minutes.
  13. Melt gelatin and add sugar and lemon juice. Mix and grease the tangerine, which is then also removed in the refrigerator.
  14. Our cake will be tall, so chocolate smudges will become a beautiful decoration.
  15. We make the icing. Bring the cream to a boil, but do not boil. Pour chocolate into pieces and butter. When the icing cools down and is not very liquid, we make smudges.
  16. Take out the yogurt cake, remove the form and parchment, put the icing in the spoon and distribute it along the edges of the cake so that it drains a little on the sides. Distribute the remaining icing on the surface of the cake. Put the mandarin on top.
