Homemade charlotte with raisins prepared according to this recipe turns out to be unusual: high, airy, very tender - it just melts in your mouth. And he learned to cook it with his grandmother.

Ingredients:

  • 4 fresh chicken eggs;
  • 6-7 apples of sour varieties;
  • 240 grams of sugar;
  • 250 grams of sour cream;
  • 160 grams of wheat flour;
  • 5 grams of baking powder;
  • 100 grams of butter;
  • 150 grams of raisins;
  • 1 teaspoon of cinnamon;
  • butter for lubricating the form - vegetable or creamy (at your discretion);
  • flour, breadcrumbs.

Delicious homemade charlotte. Step by step recipe

  1. We lubricate the form with a diameter of 28 centimeters with oil and sprinkle with flour or breadcrumbs (I always use semolina for this purpose).
  2. Wash the apples, core, and cut each into 12 equal parts. Put in a bowl.
  3. In the bowl of the mixer we drive in the chicken eggs, add sugar and beat with the mixer at high speed: until a fluffy light mass is obtained.
  4. Add sour cream to the egg mixture and mix lightly.
  5. Tip. Sour cream is better to use homemade: it is more suitable for baking. But if there is no way to buy it, then get sour cream of high fat content: it is not so acidic.
  6. In a separate bowl, mix the flour and baking powder. Sifted together in a liquid mixture.
  7. Mix very carefully, in one direction, until a homogeneous consistency is obtained.
  8. Pour melted and chilled butter. Mix again.
  9. Pour the fourth part of the dough into the prepared form, level it with a spatula.
  10. On the dough evenly, beautifully, lay out part of the prepared apples.
  11. Sprinkle apples with 0.5 teaspoon of cinnamon and half cooked raisins.
  12. Tip. Raisins must be thoroughly rinsed and poured with cold water for a short while. It will swell and become much softer.
  13. We spread the remaining apples with an even layer, also sprinkle 0.5 teaspoon of cinnamon and the remaining raisins.
  14. Pour apples with the remaining dough, smooth.
  15. We put the form with apple charlotte in an oven preheated to 180 degrees. We bake homemade pie for one hour: but everything is quite individual - it depends on what form you have chosen, and on the technical characteristics of your oven.
  16. We check readiness, as always: with a wooden stick or a toothpick.
  17. We take out the air apple charlotte from the oven, cool and turn the form on a dish or board so that the bottom layer is on top.
