I want to share my favorite recipe: these are very tasty muffins on sour cream - much more useful and even more tender than bought ones! Cupcakes are perhaps the most delicious pastry I love to cook. Both children and adults like it: you can always bring delicate and airy cupcakes with you - this is an excellent breakfast or snack. Homemade muffins on sour cream are certainly tastier than in the store - you can eat them safely, because you know for sure that they are without additives and other chemicals. This will help step by step recipe: to prevent the most simple mistakes.


  • flour - 300 grams;
  • egg - 3 pieces;
  • sour cream 20% - 150 grams;
  • sugar - 150 grams;
  • salt - 0.25 teaspoon;
  • baking powder for dough - 1 teaspoon;
  • vanilla sugar - 1 teaspoon;
  • vegetable oil - 2 tablespoons;
  • cocoa powder - 1 tablespoon.

  1. Beat cold eggs until light foam, gradually begin to pour sugar. We also send vanilla sugar and salt here. Beat well, about four minutes.
  2. Next we add sour cream, you can take any fat content - I had 20%. The fatter the sour cream, the tastier the cupcakes. Mix with a mixer at low speed.
  3. We sift the baking powder along with the flour, adding to the dough in small portions, so that the flour better fits into the dough. A thick dough should not work, otherwise it will rise poorly. We mix again at a low speed with a mixer: until a uniform consistency.
  4. At the end, pour a couple of tablespoons of vegetable oil, mix. At your request, it is allowed to add nuts, chocolate or dried berries to the dough.
  5. Next, we divide the dough into two parts: this is if you will make two-color cupcakes. Add cocoa to one and mix thoroughly. You can make only white or only chocolate: the taste will remain delicate in any case.
  6. We prepare the molds: I use the usual metal - grease well with oil and sprinkle lightly with flour. If you take silicone molds, then lubrication is not necessary. It is also allowed to bake one large cupcake, but the baking time will take almost twice as much.
  7. We lay out two types of dough in a chaotic order, alternate white and chocolate, you can make a zebra.
  8. Bake in a preheated oven at 180 degrees. It takes about 25-35 minutes to bake: it all depends on the size of the muffins. I usually bake muffins of this size for 25 minutes.
  9. We give ready-made muffins to cool down a little in shape: after that they are very easy to remove and do not break - because they are very tender!
  10. Sprinkle ready-made, still warm muffins, if desired, with powder.
