Ingredients:

  • redcurrant jam - 60 grams;
  • icing sugar or fine sugar for sprinkling parchment - 0.5 tablespoon;
  • icing sugar for decoration - 2-3 teaspoons.

Biscuit:

  • chicken eggs (C1) - 3 pieces;
  • wheat flour - 80 grams;
  • sugar - 80 grams;
  • vanilla sugar - 1.5 teaspoons;
  • water - 1 tablespoon.

Cheese Cream:

  • curd cream cheese (Almette, Hochland) - 150 grams;
  • butter - 50 grams;
  • icing sugar - 50 grams.

  1. We will bake a biscuit roll in a well-heated oven, so we turn on the oven to warm up to 180 degrees.
  2. We cover the baking sheet for biscuit with parchment paper and make the sides of the paper so that it is convenient to distribute the biscuit dough.
  3. Grease parchment paper on a baking sheet with butter.
  4. Now proceed to the preparation of the biscuit. Break eggs into a bowl: it is very good to use homemade eggs for baking.
  5. In a bowl of eggs, add sugar, vanilla sugar and beat everything with a mixer for 8-10 minutes. During this time, the mass should increase in volume by three times.
  6. Pre-sifted flour for biscuit roll.
  7. In several stages, add the sifted flour to the beaten egg mass and gently mix with a silicone spatula from the bottom up.
  8. At the end, add one tablespoon of cold boiled water and mix gently again. You need to mix quickly and not for long.
  9. Spread the finished biscuit dough on parchment paper and evenly spread it over the entire baking sheet. The thickness of the test should be 5-7 millimeters.
  10. The baking sheet with the dough is sent to the preheated oven to 180 degrees for 10-12 minutes. It is very important not to dry the biscuit during baking, as soon as the biscuit is browned - it is ready.
  11. We cover the table with parchment paper the size of a baking sheet and sprinkle the paper a little with powdered sugar (or fine sugar).
  12. We collect cold water into a small container and soak a clean kitchen towel in it.
  13. We shift the baked biscuit without removing the paper on which it was baked on parchment with sugar.
  14. We squeeze the towel well from the water, cover the cake on top and leave it to stand for 15 minutes.
  15. This time we will prepare a gentle cream on cream cheese.
  16. In a bowl for whipping, transfer the butter at room temperature, add the powdered sugar and beat the mass for 5 minutes with a mixer. The mass should become light, lush and increase in volume.
  17. Then we add cream cheese (according to the recipe) from the refrigerator and at an average speed of the mixer we beat for another 5-7 minutes.
  18. Now we remove the towel and paper on which it was baked from the biscuit cake.

  20. We spread cheese cream on top. We spread part of the cream on the side from which we will roll the roll, and distribute the remaining cream over the entire cake, not reaching the opposite edge by two centimeters.
