  • three chicken eggs;
  • 100 grams of wheat flour;
  • 100 grams of sugar;
  • 30 grams of butter;
  • one teaspoon of baking powder for dough;
  • salt;
  • vanillin to taste.

Curd cream:

  • cream - 300 milliliters;
  • cottage cheese - 250 grams;
  • sugar - 100-150 grams;
  • vanilla sugar - 0.5 teaspoon.

Caramelized apples:

  • apples - 300 grams;
  • sugar - 150 grams;
  • cinnamon - 1 tablespoon;
  • butter - 50 grams.

Protein custard:

  • chicken egg - 4 pieces;
  • sugar - 1 cup;
  • water - 125 grams;
  • a pinch of salt;
  • citric acid - 0.3 teaspoon;
  • vanillin to taste.

Delicious sponge cake. Step by step recipe

  1. Initially, let's get started making a biscuit for a delicious cake.
  2. Break three chicken eggs into the mixer bowl, add a pinch of salt, add sugar in parts and beat the eggs in a lush mass. The egg mass should be voluminous and light.
  3. Add the baking powder to the flour, mix and sift.
  4. We add flour with baking powder in two stages to the egg mass and gently knead the dough for a very delicious biscuit cake.
  5. Then add melted butter (but not hot) to the dough, mix gently again (no need to knead the dough for a long time). The biscuit dough is ready.
  6. We shift the dough into a split mold (I used a mold with a diameter of 18 centimeters) and evenly distribute it.
  7. Bake a biscuit in an oven preheated to 180 degrees for 20 minutes. Check the readiness of the biscuit with a wooden skewer.
  8. We take out the finished biscuit from the oven and leave to cool.
  9. We take out the cooled biscuit from the mold and cut it into three equal parts (this way we get three cakes for the cake).
  10. Now we are going to prepare the cream cheese curd. For this we need a blender.
  11. Transfer the cottage cheese to the blender bowl, add sugar, vanillin to taste, and interrupt everything with the blender until the curd is sweetened.
  12. In a separate container, beat very cold cream into lush foam using a mixer.
  13. The cottage cheese mass is introduced into whipped cream in several stages, and we mix everything well with a mixer.
  14. Ready cream cheese is sent to the refrigerator for cooling.
  15. And in the meantime, caramelize apples. To do this, we need dishes with a thick bottom (I use a pan).
  16. Apples (according to the recipe) are peeled and sunflower seeds, cut into small cubes.
  17. Pour sugar into the prepared pan, put on the stove and melt it completely.
  18. Transfer the prepared apples into the pan to liquid sugar, mix and simmer for several minutes.
  19. Then, if desired, add cinnamon, and again mix everything well.
  20. In a pan to apples, send butter, mix again and remove from the stove.
  21. For impregnation, combine the condensed milk with water and stir until smooth.
  22. We proceed to the assembly of the most delicious biscuit cake. To do this, we need a serving ring: set it on a plate.
  23. Put the first cake in the ring and soak it a little (if you do not like wet cakes - do not soak the biscuit).
  24. Then evenly spread the curd cream and caramelized apples.
  25. Thus we collect the whole cake. The top cake cake is not lubricated.
  26. To decorate the cake, we need a protein custard.
  27. We send sugar to a small stewpan, add water, put on a stove and bring to a boil.
  28. As soon as the caramel begins to boil, we begin to whisk the squirrels.
  29. We send egg whites (without yolks) to the mixer bowl, add a pinch of salt and beat everything into a lush mass using a mixer.
  30. Then add citric acid, vanilla sugar and mix well.
  31. Without stopping whipping, we introduce caramel into whipped proteins with a thin stream and whip the cream until it cools completely.
  32. Lubricate the top and sides of the biscuit cake with the resulting cream.
  33. We divide the remaining cream into two parts and color them in different colors - in hot pink and light pink.
  34. We take a confectionery syringe with a star nozzle and decorate the biscuit cake with roses.
