Awesome brownie with cottage cheese and raspberries. Step by step recipe

  1. The first thing you should pay attention to before starting cooking is the temperature of all the ingredients. They should be at room temperature.
  2. We start with the curd layer. Cottage cheese can be taken absolutely any fat content. You can home, but you can shop. Remember that dessert is high in calories due to the large amount of butter and chocolate, so low-fat cottage cheese can be safely used. To do this, pass the cottage cheese through a sieve so that it becomes airy, and in the finished dessert - lush and tender. You can also use a hand blender instead of a sieve or pass through a meat grinder. If your cottage cheese was bought in a store and it has a pasty texture or fine-grained, then it can be left in this form. Also if you use Philadelphia cheese.
  3. To the prepared (whipped) curd, add two chicken eggs and mix.
  4. Following the eggs we send 100 grams of sugar and vanilla sugar. Mix until smooth. Beating is not necessary.
  5. The last ingredient in the curd filling will be starch. Again, mix until smooth and set aside.
  6. Getting to the test. Remember that absolutely all ingredients must be at room temperature. The only thing we have to do is prepare the chocolate. It needs to be melted in a water bath. Do not forget to stir constantly, the chocolate should not overheat. Then leave it in a bowl (or in a saucepan), let it cool to room temperature. To make the process faster, place it in a container of cold water and stir with a spatula.
  7. The butter at room temperature is sent to a deep bowl, in which we will beat it with sugar (110 grams). Beat with a mixer for 7-8 minutes. The mass should be light, lush.
  8. Now we begin to introduce one chicken egg (there are only 3 for the test). After each egg, beat the mass with a mixer so that everything is well mixed, and at the end for about 2 minutes - the sugar should dissolve well.
  9. Chocolate cooled to room temperature is added to the prepared mass, mix everything gently with a spatula. Make sure that the chocolate has cooled well, because if it is still hot, the butter will begin to peel.
  10. At the end, we will introduce wheat flour. We introduce it into several approaches, not forgetting to sift the flour through a sieve. After each serving of flour, knead with a spatula all the way to a more or less uniform state. After the last portion of flour, the mass should become homogeneous, very chocolate and aromatic.
  11. We take a form with high sides in which we will bake brownies. I use a form with dimensions of 31x24 centimeters. You can take a smaller form, then the layers of dough and curd layer will be thicker. But I don’t advise taking a larger form. Cover the bottom of the form with parchment paper. There is no need to lubricate.
  12. At the bottom of the form we lay out half of the chocolate dough and level it as much as possible. To do this, you can use a spatula or spoon.
  13. We spread all the curd filling on the dough and also level it on the surface of the dough.
  14. The third layer (final) will again be the dough. For your convenience, move it into a pastry bag or in a plastic bag and gently place it over the curd filling. Then, with a spoon or spatula, flatten everything evenly. You can also slowly spread the remaining dough with a teaspoon.
  15. If you can’t even close the curd layer evenly the first time (there wasn’t enough cottage cheese or the dough was mixed with cottage cheese), it’s not at all scary, all the same it will be very tasty.
  16. Now take raspberries. Previously, raspberries had to be washed and dried. Put it on top, it is desirable that the cut is on top, slightly deepen the berry into the dough.
  17. Preheat the oven to 170 degrees and bake the cake for about one hour. Remember that readiness is checked with a toothpick. It should come out moist, but without the remains of raw dough.
  18. After one hour, turn off the oven and open the door. Let the brownies cool down a bit in this condition. Then we get it and leave it in shape until it cools completely.
  19. The cooled cake is cut into portioned pieces. These will be brownie cakes with cottage cheese and raspberries.
