We bring to your attention a very simple and delicious recipe for an Italian dessert.


For panna cotta:

  • cream (33%) - 250 grams;
  • yogurt - 250 grams;
  • sugar - 80 grams;
  • gelatin (instant or leaf) - 8 grams;
  • water (cold) - 50 grams;
  • vanilla pod (vanilla extract or vanilla sugar) - 1 piece.

For jelly:

  • frozen strawberries (cherries, currants, raspberries) - 300 grams;
  • sugar - 80 grams;
  • gelatin (instant or leaf) - 8 grams;
  • water (cold) - 50 grams;
  • juice and zest - 0.5 lemon.

Awesome panna cotta with berry jelly. Step by step recipe

  1. To prepare the panna cotta, we need two cups in which we will soak the gelatin for swelling.
  2. Pour 50 grams of cold water into a glass, add gelatin (for panna cotta I use instant gelatin, but I can also use leaf gel), mix well and leave to swell.
  3. In the second glass, for the berry layer panna cotta, we soak the gelatin in exactly the same way, and leave it to swell.
  4. In a small saucepan (you can use the stewpan), pour the fat cream, add the seeds from one vanilla pod and the vanilla pod itself, pour the sugar.
  5. We send the pan with the contents to the stove, stirring occasionally, heat the cream almost to a boil. As soon as the first bubbles of boiling appear, remove the pan with cream from the stove. The cream is saturated with a vanilla flavor and the sugar dissolves quickly.
  6. Filter the cream through a fine sieve.
  7. To the filtered cream, add the swollen gelatin (one cup) and mix well until a homogeneous mass is obtained.
  8. Then add yogurt to the cream container (according to the recipe) and mix everything with a blender.
  9. We set the glasses for panna cotta at an angle: in this way the sweet panna cotta hardens awesomely beautiful.
  10. Pour cream into prepared forms.
  11. We send the panna cotta to the refrigerator until it solidifies completely.
  12. This time we will prepare the berry layer. I will prepare a berry layer of frozen strawberries, but you can use raspberries, cherries, currants.
  13. Strawberries are placed in a small stewpan, add sugar, zest and juice of half a lemon, and send the stewpan with berries on the plate. As soon as the strawberries begin to boil, immediately remove the stewpan from the stove.
  14. Punch strawberries in a saucepan with a blender until strawberry puree is obtained.
  15. In hot strawberry puree, add the swollen gelatin and pierce well with a blender until the gelatin is completely dissolved in the berry puree.
  16. Leave to cool the berry puree to room temperature.
  17. We take the molds from the refrigerator with a frozen creamy layer and fill the top of the cream with strawberry jelly.
  18. We send the dessert again to the refrigerator: until it completely solidifies (it takes me 5-6 hours to do this).
  19. Before serving panna cotta, garnish with fresh mint leaves if desired and eat the funky panna cotta right from the glass.
  20. The classic panna cotta with berry jelly is stored in the refrigerator for up to 2-3 days.
