Giant M & M’S

At first glance it’s hard to imagine a giant “M&M’S ”: such an original, bright and very beautiful round chocolate with a nut inside will not only surprise a child - it will surprise an adult. Ingredients:

Candy wrapper:

  • water - 40 milliliters;
  • sugar sand - 170 grams;
  • glucose syrup (starch syrup) - 80 grams;
  • a pinch of citric acid.

The shell is a silicone form with hemispheres (I have 7 centimeters in diameter).

For walnut:

  • roasted peanuts - 20 grams;
  • sugar sand - 20 grams;

Walnut - a silicone form with hemispheres (I have 4 centimeters in diameter).

Chocolate Filling:

  • milk chocolate - 150 grams;

Icing:

  • dry egg white - 1 teaspoon;
  • slightly warm boiled water - 1 tablespoon;
  • icing sugar - 100 grams;
  • food coloring (yellow in my case);
  • boiled cold water - 0.5 teaspoon and 2 tablespoons.

Giant "M&M’S. " Step by step recipe

  1. Let's start by preparing the shell for "M&M’S. " Take a deep pan or stewpan with a non-stick bottom. Pour forty milliliters of water, add 170 grams of sugar, glucose syrup and a pinch of citric acid into it. We mix with a silicone spatula (it is most convenient to work with such a spatula, it does not scratch the bottom of the pan and gently mixes the whole mass). We put on medium heat. Stir, and wait for the sugar to dissolve. Then bring the syrup to a boil. After boiling, stop stirring, cook until the syrup reaches a temperature of 145 * C. If droplets appear on the walls of the pan, moisten the brush and rinse them off.
  2. Ready hot syrup is very carefully poured into two hemispheres: along the very edges. Leave on the kitchen table for fifteen minutes.
  3. Then gently turn the form over the plate and pour the syrup. When the syrup stops draining, gently with a hot knife (you need to hold its blade over the fire, heat it well), cut off the frozen syrup. Turn the form back. We heat the knife again and cut off exactly the edges: trim and remove the excess caramel. Do it carefully: make sure that there are even edges in the hemispheres. We leave for one hour, so that everything grasps and freezes.
  4. In the meantime, prepare a big nut. Roasted peanuts are slightly fried over medium heat. Let cool and chop nuts with a knife. Transfer to a bowl, set aside.
  5. Take another small saucepan with a thick bottom. Pour only 20 grams of sugar and put on fire (below average). This time we do not interfere. Let the sugar dissolve completely. It should change color, become dark (beer color).
  6. Then add chopped nuts. Now mix thoroughly with a silicone spatula so that all nuts are coated with sugar.
  7. We take the prepared silicone mold with hemispheres (4 centimeters in diameter). We shift into the form and carefully ram the nuts with a spatula. We need one giant nut - so we fill two hemispheres.
  8. Now make the chocolate filling. We break the chocolate bar into small pieces and transfer it into a bowl. We heat it in a microwave or in a water bath. If you do this in a microwave oven (like me) then take it out every 30 seconds and mix with a spatula. Do this until the chocolate has a uniform consistency.
  9. Let the chocolate cool a bit. After that, we shift it into hemispheres, not reaching the edge of about 0.5 centimeters.
  10. Now in the middle we insert one half of the nut and press it a little so that it is completely immersed in chocolate. Make sure they are on the same level. We put in the refrigerator for 30-40 minutes. Chocolate should completely harden during this time.
  11. Prepare icing sugar. In a bowl, mix one teaspoon of dried egg white and a tablespoon of slightly warm water. Mix until lumps completely dissolve.
  12. Take another bowl. Pour the icing sugar and add the protein mass to it. Now you need to beat all this with a mixer. First you need to start with small revolutions, then increase them. Beat all for about 5 minutes.
  13. Separate approximately ⅕ of the glaze into a separate bowl. Add 0.5 teaspoon of cold boiled water and mix well. Cover the bowl with cling film and set aside.
  14. Add food coloring to the other bowl (shell color “M&M’S ”is yellow) and mix thoroughly. Then pour two tablespoons of cold boiled water. We cover with cling film so that the icing does not freeze and set aside.
  15. Now we take out forms from the refrigerator. We take out hemispheres and put them on parchment paper.
  16. Now, using a spoon or brush, apply the first layer of yellow glaze and leave it on the table for an hour: solidify. Glaze again covered with cling film.
  17. Then we put two halves of the giant "M&M’S ”on small containers (for example, an inverted glass or cup) and apply another layer of yellow glaze with a spoon (but its layer should be thicker). We remove excess glaze from the edges and leave it to harden for an hour.
  18. After an hour, the icing will harden. We now need to cut out the letter “M”, as in the dragee “M”&M’S ”and with a brush apply on one hemisphere with white icing. Leave for another two hours.
  19. When the icing is completely frozen, put a little more chocolate on the halves, but do not go into the nuts. We connect the two halves, press them lightly, and put in the refrigerator for another thirty minutes.
  20. Then we take it out of the refrigerator and use a brush to paint over the place where the two halves join. Leave for another hour to harden.
  21. After all the time, the giant "M&M’S is ready.
