  1. Sift through a sieve 300 grams of flour on a clean work surface (table). Thanks to sifting, the flour is enriched with oxygen, and dough products are especially airy and tender.
  2. On top of the flour we grate 250 grams of butter on a coarse grater. The oil should be well chilled, that is, we take it out of the refrigerator immediately before rubbing.
  3. Now hands quickly grind the butter and flour into crumbs.
  4. Add to them a teaspoon of baking powder for the test, two tablespoons of vodka and 300 grams of sour cream.
  5. Knead the dough.
  6. Pour a little flour as needed. The dough should not stick to your hands. It should be soft and supple.
  7. Everyone may need a different amount of flour, since it all depends on its moisture content, on the fat content and consistency of sour cream and butter.
  8. Round the finished dough, wrap it in a plastic bag and put it in a cold place (refrigerator) for 30 minutes.
  9. After this time, we take out the dough from the refrigerator and for convenience we divide it into two parts.
  10. Sprinkle the working surface with flour a little, put one part of the dough and roll it with a rolling pin. You should get a rectangular layer with a thickness of 5 millimeters.
  11. Using a fishnet knife, cut out the rectangle. We cut the large rectangle of the dough into small rectangles of approximately 7x6 centimeters.
