Curd cake is not burdened with flour cake and, moreover, completely uncomplicated in preparation: because it does not require baking. If you are tired of hearty chocolate desserts, I propose to cook a light, airy, home-made cake without baking. Its coconut taste reminds candies from the advertisement of the same name.   • cracker cookies - 110 grams;
  • butter - 60 grams;
  • cream cheese Philadelphia - 250 grams;
  • creamy ricotta cheese - 250 grams;
  • condensed milk - 400 grams;
  • cream 30% - 200 milliliters;
  • coconut flakes - 100 grams;
  • sugar - 2 tablespoons;
  • gelatin - 16 grams;
  • Raffaello candies for decoration.

Homemade Raffaello Cake. Step by step recipe

  1. This jelly cake is prepared using our usual thickener - gelatin. First you need to soak the gelatin in cold water.
  2. Pour cream into a pan with a thick bottom and add sugar. Stirring, bring the creamy mass to a boil, but in no case boil.
  3. Remove the cream from the heat and add the swollen and expressed gelatin to them. Stir the gelatin until completely dissolved.
  4. Since our cake is cooked without baking, you need to take ready-made cookies. Separately, grind the cracker into crumbs. You can do this with a rolling pin by placing cookies in a plastic bag. Raffaello cake cracker should not be salty. It can also be replaced with any other cookie.
  5. Pour melted butter and a couple of tablespoons of water into the cracker crumbs.
  6. Mix everything thoroughly until smooth.
  7. We transfer the mass from cookies and butter to a split mold. Pre-cover it with parchment paper.
  8. Well level and ram the mass of cookies. This will be the basis for our homemade cake.
  9. We remove the finished base in the refrigerator for 1 hour.

Tip. You can put cakes of cookies for 10 -15 minutes in the freezer.

  1. In a container with cream and gelatin, add ricotta cheese, Philadelphia and condensed milk.

  1. Add coconut flakes to the cheese mass - this will be the filling for our Raffaello cake. Since the cake contains a lot of cheese, it is also called cheese cake without baking.

Tip. It is better to take coconut flakes with a high fat content - it will be softer and tastier.

  1. Using a mixer, beat the cheese mass to a homogeneous consistency.
  2. We shift the whipped cream and cheese mass onto the base for a cracker cake.
  3. Level the surface and put the finished cake in the refrigerator for several hours.
