Amazingly delicious Kiev cake according to GOST - airy, crispy cakes, nuts and a gentle butter cream. Real jam! There are already many recipes for this dessert, but I want to share the best I've tried. Let's cook together!

Ingredients:

  • protein from an average egg - 6 pieces;
  • granulated sugar - 230 grams;
  • nuts (peeled peanuts, cashews, etc.) - 1 cup;
  • flour - 50 grams;
  • vanillin - 1 sachet;
  • salt is a pinch.

For cream:

  • oil - 300 grams;
  • yolks - 4 pieces;
  • sugar - 1 cup;
  • milk - ⅔ cup;
  • cocoa powder - 1 tablespoon;
  • vanilla sugar - 1 sachet.

  1. We will prepare and age the egg whites in advance: for this, leave the eggs not in the refrigerator for 12 hours. If you do not have time, you can age much faster: separate the proteins and pass them through a strainer.
  2. Sugar, take the crayons, if there is a coffee grinder, then generally make the powder.
  3. Beat the whites with a pinch of salt until fluffy. Introduce 50 grams of sugar in small portions while continuing to beat.
  4. Roast and chop nuts
  5. Mix flour, the rest sugar, vanillin and nuts, add to the proteins, gently stirring with a spatula.
  6. We take 2 identical forms, cover with parchment paper, lightly grease with oil, pour over the same amount of dough.
  7. Bake in a preheated oven to 150 degrees for about 2 hours. After 10-15 minutes, after putting in the oven, open the door so that excess moisture comes out. Let the cakes dry until ready.
  8. Leave the finished cakes for 10-12 hours, so that they condense, only after being separated from the parchment, otherwise they may crumble in your hands.
  9. For cream, combine milk, sugar, vanilla sugar, put on fire and bring to a boil.
  10. Separately, slightly beat the yolks and pour in a thin stream half of the boiled milk, stirring quickly.
  11. After that, pour the yolk-milk mixture into the remaining milk and put it on the fire again, bring to a boil and cook for about 3 minutes, do not forget to constantly stir, otherwise the cream will burn. Remove from heat and cool completely.
  12. Beat soft butter until fluffy and gradually introduce the cooled brewed cream.
  13. The cream is divided into 2 parts, approximately in the ratio of ⅓ and ⅔. Add cocoa powder to a large part and mix well.
  14. We spread white cream on the first cake, the second and sides of the cake are well coated with the remaining chocolate cream. If desired, it can be decorated with cream, nuts, crust crusts, etc.
