Lean pastries, prepared without eggs and sour cream, can be very tasty, and the proof of this is lean charlotte with apples. A vegetarian pie melting in your mouth will appeal to everyone, including the mothers of young children, dieters, fasting people, and vegetarians. There will simply not be anyone indifferent: an incredibly tender, defiantly delicious pie will gather the whole family at the table in a matter of moments - as soon as the aromas of vanilla and apples spread throughout the house.


  • 3-4 large apples (I usually choose sweet and sour varieties for charlotte);
  • powdered sugar (you can also use a little ground cinnamon);
  • semolina or bread crumbs;
  • 250 grams of wheat flour;
  • half a teaspoon of salt;
  • 130 grams of sugar;
  • 150 milliliters of orange juice;
  • 0.3 cups of any vegetable oil;
  • 30 milliliters of vinegar or lemon juice;
  • one teaspoon of baking soda dissolved in two tablespoons of water.

Lean Charlotte with apples. Step by step recipe

  1. Wash apples thoroughly under running water. Cut out the cores and black spots. I do not peel the skin so that the apple slices remain intact.
  2. Cut apples into thin slices.
  3. For baking lean charlotte without eggs, I use a mold with a special non-stick coating. Sprinkle the form with semolina or breadcrumbs so that the cake does not stick and does not burn.
  4. We spread apples evenly on the form. So that there is no free space.
  5. In a large bowl, mix sugar, salt, pour orange juice, vinegar and vegetable oil.
  6. Beat mass until sugar is completely dissolved.
  7. Add the sifted flour. Mix everything thoroughly until a homogeneous dough is obtained. The consistency of the test should be a little thicker than sour cream. I prefer to use a mixer so that there are no lumps of flour and butter.
  8. In a separate cup, mix soda with water.
  9. Add the solution to the dough and stir everything again.
  10. Pour apples with the resulting dough. Level with a spatula or knife.
  11. We bake charlotte in an oven preheated to 190 degrees until cooked. (We check readiness with a wooden stick or toothpick). We leave the finished apple charlotte infused in a warm place for one hour.
  12. When the fruit cake has cooled, you can remove it from the mold and turn it over.
  13. For decoration, sprinkle with powdered sugar. (You can prepare the powder yourself, using a blender, from ordinary sugar). Since we were making a cake of sweet and sour apples, adding a little sweetness would not be out of place.
