Lemon roll

Unusually tasty, refined pastries, with a wonderful aroma - lemon roll. It will take some effort from you to make it, but it's worth it: a delicate sponge cake melting in your mouth, a fragrant lemon cream will delight everyone who gets at least a piece. Soon March 8th - and the biscuit roll with lemon cream will be the decoration of your table for the holiday.

Ingredients:

  • 4 eggs;
  • a pinch of salt;
  • 4 tablespoons of water;
  • 120 grams of sugar;
  • 100 grams of flour;
  • 40 grams of coconut.

For cream:

  • 5 grams of gelatin;
  • 40 milliliters of water;
  • 3 lemons;
  • 250 grams of powdered sugar;
  • 100 grams of butter;
  • 2 eggs.

Sponge roll with lemon filling. Step by step recipe

  1. Separate the whites from the yolks. Add a pinch of salt to the proteins and beat them into a lush foam.
  2. Separately, beat egg yolks with 4 tablespoons of water and 120 grams of granulated sugar to strong peaks.
  3. We shift the yolks to the proteins, add the sifted flour (it is better to take a special flour for baking), put the coconut flakes and knead with a spatula until smooth.
  4. On a baking sheet covered with baking paper (you can also use parchment paper), place the dough and distribute it evenly.
  5. Bake in a preheated oven to 200 degrees for 15-20 minutes.
  6. We spread the baked cake on a towel and with it we turn it into a roll (along with a towel). Leave to cool.
  7. To prepare the cream: soak the gelatin in water. Remove the zest from two lemons with a knife (I use a knife to peel vegetables).
  8. Squeeze the juice out of three lemons (we need 100 milliliters - this is about half a glass) and filter.
  9. Pour powdered sugar into a bowl with juice, put softened butter and lemon zest (directly with the shavings obtained when removed with a knife).
  10. On low heat, with constant stirring, bring the mixture to a boil and cook for 7 minutes. After ready, remove the zest from the cream.
  11. Break 2 eggs into a separate bowl and add 100-150 milliliters of hot cream in two doses. Pour back into the cream and bring to a boil over low heat (but do not boil).
  12. In a hot cream removed from the fire, pour gelatin, put in a bowl with ice and whisk until a strong foam - white and lush.
  13. Put the finished cream in the refrigerator for 1.5 hours.
  14. After the time, we lubricate the unfolded cake with three quarters of the cream, turn it back into a roll.
  15. With the remaining cream, coat the top and sides of the roll.
  16. We decorate to your liking: you can use pieces of fruit, candied fruit, fresh or frozen berries, coconut, mint sprigs, nuts.
