Today I will tell you how to make milk caramel at home. The kids are simply delighted with the unusually tender and soft caramel. Of course - this is a recipe with a taste of childhood. Be sure to make homemade sweets with your sweet tooth: they can safely help you and enjoy this simple and interesting process. Even adults are interested to observe how the caramelization process occurs. Cooking caramel at home will not take you much time.

Ingredients:

  • sugar sand - 300 grams;
  • 35% cream - 400 milliliters;
  • confectionery glucose - 200 grams;
  • butter - 15 grams or 1 tablespoon;
  • salt is on the tip of a knife.

Milk Caramel. Step by step recipe

  1. To begin with, take a pot of at least 3 liters. It is desirable that it has a thick bottom. Pour sugar and add cream to it. In the recipe, I indicated the cream fat content is 35%, but if you take less, it's okay: this will not affect the result. We put the pan on medium heat, constantly mix with a spatula. It is advisable to use either a wooden or silicone spatula. Bring to a boil. We carefully monitor that the mass does not run away.
  2. When our mixture boils, it's time to inject confectionery glucose. Do not stop mixing: the mass is gradually boiled.
  3. I ordered confectionery glucose in the online store. There are many sites and specialized stores where today you can buy it.
  4. Now we need a thermometer: when the temperature of the mixture reaches 110 * C, we add a piece of butter and a pinch of salt. Mix everything carefully. We put the pan aside, turn off the stove. Let’s stand for a while and cool.
  5. If you do not have a thermometer in your house, add butter at the moment the mixture boils.
  6. Then, using a spatula, transfer the mixture from the pan to the prepared container: for example, in a deep bowl. The main thing is clean and dry. Ready homemade caramel can be used to prepare a variety of sweets: sweets, bars, cakes, as well as many other confectionery products. It has a pleasant, delicate, soft texture and a very beautiful caramel yellow color.
  7. Homemade caramel sweets are ready.

In order to cook it in batches, you will need parchment and a baking sheet. We cover the baking sheet with parchment and transfer the warm caramel mass evenly with a spatula. The height of the layer depends on what thickness of candy you want. When it hardens, take a sharp and dry knife. Cut into rectangular pieces - or any other that you want.
