Many times I heard about carrot pies, carrot cakes and other carrot desserts, but I never dared to cook something like that. I didn't really like the standard simple recipes. I wanted something new, unusual. And then the idea came to make carrot cake in a new way. I made an incredibly airy and delicious cream, in combination with carrot cakes, a chic dessert was born. I offer everyone the perfect recipe for carrot cake in a new way.

Ingredients:

For the test:

  • carrots - 400 grams;
  • wheat flour - 350 grams;
  • vegetable oil - 240 grams;
  • eggs - 4 pieces;
  • cinnamon - 1 teaspoon;
  • baking powder - 2 teaspoons;
  • walnuts - 240 grams;
  • butter - 1.5 tablespoons;
  • zest and juice from orange;
  • cane sugar - 380 grams;
  • salt.

For cream:

  • butter - 70 grams;
  • Mascarpone cheese - 250 grams;
  • Philadelphia cheese - 200 grams;
  • icing sugar - 250 grams.

New carrot cake. Step by step recipe

  1. First you need to dry the nuts until a pleasant nutty smell appears, then mix them with oil and add a pinch of salt, set aside.
  2. Making the dough: mix the liquid part (eggs, butter, juice). Mix the dry part (flour, baking powder, sugar, orange zest). Combine the liquid and dry mixes, add carrots to them, which must be grated beforehand. Stir everything.
  3. In the oven preheated to a temperature of 180 degrees, we send the first cake, bake for about 20-25 minutes. Then, according to the same scheme, two more cakes. As a result, you should get 3 identical cakes. Leave them to cool on a wire rack.
  4. For cheese cream, beat the butter at room temperature until smooth, add Mascarpone, Philadelphia cheese and icing sugar. Beat until all lumps are dissolved.
  5. We collect a cake, we coat each cake with cream, not regretting, top the whole cake with cream. Garnish with nuts and orange slices.

In order for the cream to be airy and tender, Mascarpone and Philadelphia must be at room temperature. The main thing is not to dry the cakes, they should be slightly moist, then the cake will be very juicy and soft.
