Today I want to tell you one recipe for the perfect pancake dessert that will not leave anyone indifferent. This dessert is also called Austrian pancakes, and there is nothing complicated in its preparation. I cook this delicacy even when guests come; they are simply delighted with it. Thin pancakes with delicate filling under a fragrant filling, and all this is baked in the oven until golden brown. The baking is so delicious and airy that it just melts in your mouth.


  • 15 pieces of pancakes;
  • 60 grams of sour cream;
  • 80 grams of sugar;
  • 30 grams of butter;
  • 300 grams of cottage cheese;
  • 2 chicken eggs;
  • 10 grams of starch;
  • 30 grams of raisins. To fill:
  • 30 grams of sugar;
  • 100 milliliters of milk;
  • 2 chicken eggs;
  • 50 grams of sour cream;
  • vanillin to taste. * The size of my form is 22x32 cm

  1. To begin, in a convenient bowl, use a fork to knead the cottage cheese, then drive the eggs into it, pour sugar, starch, sour cream and mix thoroughly.
  2. Next, add melted butter (I melt with a water bath), raisins and mix everything thoroughly again.
  3. We spread the resulting homogeneous mass on each pancake, evenly distributing it on the surface. We turn the pancake into a tube, cut it in half and put it in a baking dish.
  4. Preheat the oven to 180 degrees and put in it a form with pancakes for ten minutes.
  5. In the meantime, prepare the fill. In a convenient bowl, add milk, drive eggs, pour sugar, sour cream, vanillin and mix everything until smooth.
  6. With the resulting homogeneous mass, fill the pancakes in the form and again put the bake in the oven preheated to 180 degrees for another twenty-five minutes.
  7. We take pancakes out of the oven, let cool slightly, cut and serve. I really like serving this dessert with berry sauce. For its preparation, I use fresh berries: black and red currants (180 grams), raspberries (90 grams). You can use any berries based on your preference.
  8. Pour the berries in one bowl, sort it out, rinse well, and then interrupt using a blender. To remove excess seeds and peel, I pass a homogeneous mass of berries through a sieve. Then add water (50 grams), starch (1 teaspoon) and mix until smooth.
  9. Next, add sugar (60 grams) to the sauce, put on fire, stir, bring to a boil, the sauce should thicken. Remove the sauce from the heat, add butter (30 grams) and mix until it is completely dissolved. I put the sauce in the refrigerator to cool.

  1. First, pour flour into a convenient dish, add sugar, salt, starch to it and mix with a spoon.
  2. Then pour the milk, while stirring with a whisk. Tip. Pancakes will turn out openwork, in the hole if the milk is warm.
  3. Next to a homogeneous mass we drive in the eggs and again we mix everything with a whisk.
  4. After that, pour the vegetable oil and mix until smooth.
  5. Cover the resulting dough with a lid and leave for twenty minutes.
  6. If you want pancakes to be thin, then the dough for them should be liquid. Also, the dough should be without lumps. In terms of density, it should be similar to liquid sour cream, but in its consistency it should not be like water. Tip. If you got a liquidy dough, then add a little flour into it, if it is thick, then add a little milk.
  7. When the dough has stood for twenty minutes, you can proceed to frying pancakes.
  8. Before pouring the dough into a pan, stir it with a spoon (as potato starch settles to the bottom).
  9. Fry the pancakes in a well-heated and hot pan. Be sure to use the pan with the handle, tilting it a little, pour in the dough and in a circular motion of the pan distribute the dough evenly over the surface. Everything needs to be done very quickly, since the pan is hot and the dough sticks very quickly.
  10. If you fry pancakes when frying, then most likely there is not enough flour in the dough. If the pancakes come out very thick, then your dough is thick, you need to dilute it with milk.
  11. The pancake is ready if it is lightly browned on both sides, the edges will become crispy.
