Pineapple Cupcakes

I'm a terrible sweet tooth and a cupcake lover. I love them not only to eat, but to bake. I want to share with you one of these wonderful recipes. Pineapple muffins are an amazing combination of sweet and sour, which wonderfully complement each other in any baking.

Ingredients:

  • pineapple - 3 rings;
  • walnuts (peeled) - 100 grams;
  • eggs - 3 pieces;
  • butter - 150 grams;
  • flour - 1 cup;
  • sugar - 0.5 cups;
  • baking powder - 0.5 sachets;
  • coconut flakes - 3-4 tablespoons;
  • powdered sugar - 2 tablespoons.

Muffins with pineapples. Step by step recipe

  1. Mix flour with baking powder and sugar. This will help evenly distribute the ingredients in the dough.
  2. Next, add the eggs and mix well.
  3. We take out the butter in advance from the refrigerator to make it soft. In no case should you defrost it in a microwave or on a stove.
  4. Add to the flour with eggs and mix until smooth.
  5. Grind walnuts into small pieces. Put in the dough and mix. The dough should turn out semi-liquid.
  6. For baking, we use special forms for muffins. Most often I bake in small portioned forms. If you use silicone molds, then lubricating them is optional. But if you use metal, it is better to grease with butter and sprinkle with semolina. Also, together with metal tins, I recommend using paper cups for baking muffins. Then you do not have to lubricate them.
  7. We preheat the oven to 180 degrees in advance.
  8. Pour the dough into molds for 2/3. Otherwise, when baking, it rises and spills out of the mold.
  9. Pineapples are cut into small pieces and spread on top of the cupcakes. Sprinkle with coconut.
  10. Bake in the oven for 30-35 minutes.
  11. Sprinkle with powdered sugar before serving.
