  • sugar - 120 grams;
  • water - 40 ml;

  1. Let's start the production of syrup. Everything is simple here: we mix sugar and water, put on fire for 5 minutes. To check the preparedness of the syrup with a spoon, dip it into the syrup, remove it and you will see a thin caramel thread. The syrup is ready.
  2. In a mixer bowl, whisk our whites with lemon juice and vanilla sugar (about 2 minutes), then wind up and mix until stable foam.
  3. Pour syrup into the protein mass with a thin thread and beat everything at maximum speed. Beat the cream for about 5 minutes until it becomes room temperature. Voila.
