Quick Kefir Cake

I want to give you the secret of a happy time of youth - a student cake (and a recipe for its preparation, of course). A quick kefir cake does not require much time, products and a variety of devices. A minimum of waiting - and you can enjoy the delicate chocolate flavor of the cake, remembering fun student days with your family.

Ingredients:

  • wheat flour - 320 grams (2 cups);
  • sugar sand - 200 grams;
  • kefir - 250 milliliters;
  • eggs - 2 pieces;
  • cocoa - 50 grams (you can not use it, then the cake will be light);
  • vanilla sugar - 5 grams;
  • baking powder - 10 grams;
  • salt - a pinch;
  • butter or sunflower oil for lubrication;
  • apricot jam.

Cream:

  • condensed milk - 380 grams;
  • butter (room temperature) - 200 grams;
  • walnuts (fried) - 50 grams;
  • prunes - approximately 8 medium pieces.
  • 100 grams of dark chocolate for glaze and crushed nuts for decoration.

  1. First, prepare a bowl in which we will combine our dry ingredients: flour, salt, baking powder and vanilla sugar. Be sure to pass everything through a sieve: then we will avoid lumps, and the dough will have a uniform and even structure. We mix everything.
  2. We take a deep bowl (then in it we will knead the dough), in which we beat with a mixer 2 eggs with sugar. Beat to a thick foam: it takes about 2 minutes. It turns out a very beautiful creamy color of beaten eggs and sugar.
  3. Now we need kefir (or another liquid fermented milk product: yogurt, yogurt, fermented baked milk): it is desirable that all products have the same temperature. Therefore, we do not take kefir from the refrigerator: it is better that it is close to room temperature. Add it to the beaten eggs and mix thoroughly.
  4. Combine the dry ingredients from the first step with beaten eggs and kefir.

To do this, I recommend gradually and slowly, on a tablespoon, add flour and beat with a mixer at low speeds.

  1. Add sifted cocoa to the dough. Mix with a spatula: we have a very tasty chocolate mass. We take out the mixer again and beat for a couple of seconds so that the mass is homogeneous and evenly chocolate.
  2. We will postpone our dough for a short while and get down to preparing a baking dish. Here, everyone uses the form that he has.

I personally have a round detachable shape with a diameter of 22 centimeters. At the bottom of the form I spread the parchment. Lubricate the inside with butter (creamy or sunflower).

  1. Turn on the oven to heat up, set the temperature to 180C.
  2. We pour and level our dough in the form.
  3. Put in a preheated oven and bake for 45 minutes. Readiness check match. When the match is dry and clean, the cake is ready.

While the cake is baking, you can do cream.

  1. We take condensed milk and butter at room temperature. Beat with a mixer until creamy. Add a handful of nuts (pre-crush them with a rolling pin) and finely chopped prunes. Ready cream is divided into three parts. One part is needed to lubricate the sides of the cake, so put it in a separate bowl.
  2. Carefully remove the split ring of the mold and cut off ⅔ of the upper part of the cake (“hat”). We don’t get the rest of the cake: it remains in shape.
  3. Cut the removed tip into pieces (after cooling): each piece is approximately 1.5-2 centimeters.
  4. Carefully coat the cake with jam. We take the detachable form and return it back to the cake.
  5. Add chopped crumbs to the cream and mix thoroughly.
  6. Spread the resulting mass on top of the cake. All is well to be tamped and leveled. It is advisable to use a silicone spatula.
  7. Slowly open the form and remove the ring. Lubricate the edges of the cake with the rest of the cream.
  8. We take a bar of dark chocolate, chop finely, place in a bowl and put in a water bath (the fire should be small). Often stir so that the chocolate is not burnt.
  9. Fill the cake evenly with liquid chocolate. We decorate the sides with nut crumbs and transfer the finished student cake to the dish.
