I want to share with you a secret: how to make a quick dough for a pie. From simple ingredients you will get an incredibly tasty, tender and versatile dough, from which you can bake a pie with both salty and sweet fillings. The dough is prepared without yeast quickly and simply simple !!! Homemade cakes based on this test are tender, incredibly tasty, soft and lush. I have been baking from this test for a long time and it has never failed me. After all, it is no secret to anyone that in many cases the quality and delicacy of your baking depends on the test with which you work. And this test has a huge plus in that it is prepared very quickly. This quick dough for a pie can be prepared by any housewife. Take a note, try it and you will be pleasantly surprised.


  • butter - 100 grams;
  • wheat flour - 2 cups;
  • sour cream - 4 tablespoons;
  • one egg;
  • sugar - one teaspoon;
  • soda - 0.5 teaspoon;
  • salt - 0.25 teaspoon.

Quick dough for the pie. Step by step recipe

  1. We must sift the wheat flour for the preparation of the dough (for a quick shortcrust pastry, I take two glasses of flour without a slide). From sifted flour, the baking is tender, airy.
  2. Butter will use room temperature.
  3. Pour the sifted flour onto the working surface (in my case, this is a table), make a small depression in the center of the slide with flour (like a hole) and add oil. We chop with a knife to obtain butter and flour crumbs.
  4. In a separate container, mix the sour cream (the fat content of the sour cream that you will use is not important), salt, sugar, soda and an egg (the egg is best used homemade and fresh).

Tip: if you bake a cake with a sweet filling, you can add more sugar. In this case, add half a glass and this is enough. But you can bake a pie with a sweet filling based on these ingredients. It all depends on whether you are a sweet tooth or not.

  1. Then again, in the butter and flour crumbs, we make a deepening, carefully pour the liquid mixture from sour cream and continue to chop with a knife until all the ingredients are combined. Knead the dough with your hands.

Tip. There is one condition in the preparation of this test: when you knead the dough with your hands, you should not do this for a long time, because the dough will have a layered structure. And homemade cakes based on such a test will not live up to your expectations.

  1. Wrap the finished dough, which does not stick to your hands, in a plastic wrap (a small plastic bag is suitable) and place it in the refrigerator to cool the dough a bit (this should not be neglected, because it is important).
