I bring to your attention the recipe for the cake "Buy Pai": a favorite treat of my family. The rich coffee and chocolate flavor of its cakes, which perfectly complements the gentle curd cream, is a wonderful dessert for morning coffee or lunch tea. This biscuit cake will be enjoyed not only by children, but also by adults.
- cocoa powder - 80 grams;
- baking powder - 2 teaspoons;
- flour - 300 grams;
- butter - 170 grams;
- sugar sand - 250 grams;
- milk - 170 milliliters;
- espresso coffee - 100 milliliters;
- eggs - 2 pieces.
- cottage cheese 9% - 380 grams;
- dry gelatin - 20 grams;
- vanillin - to taste;
- cream 33% - 450 milliliters;
- sugar - 150 grams.
Cake "Buy Pie". Step by step recipe
- Cooking sponge cake "Buy Pai" consists of two parts. First cook the cakes. Stir all the dry ingredients of the cake: sifted flour, cocoa powder and a little sugar. Add baking powder.
- Tip. If dry, mix flour, cocoa and sugar - this will help to avoid lumps in the further preparation of sponge cake dough.
- In a separate bowl, mix the butter with granulated sugar, which remains: using a combine, mixer or whisk. The mass should become lush and brighten.
- Enter the oily mass of the egg.
- Tip. Eggs need to be beaten one at a time, each mix well.
- In the egg-butter mixture, add milk and dry bulk ingredients for the chocolate cake. This should be done gradually, alternating between dry and liquid products. Mix well.
- At the very end, add hot espresso.
- It can be replaced with any brewed coffee without sediment or instant strong coffee.
- The finished biscuit chocolate dough for the cake needs to be divided. If we bake a cake in the form of a diameter of 16-17 centimeters, then divide the dough into six parts. If you have a shape of 20 centimeters in diameter, then divide the dough for the cake into 4 parts. At the bottom of the detachable form we line the parchment. And pour a portion of dough.
- We bake cakes for the cake "Buy Pie" in a well-heated oven (up to 180 degrees) until cooked. We check readiness with a toothpick or wooden stick. If the stick remains clean after piercing, the cake is ready. We bake all the cakes and cool them.
- The next step in the preparation of biscuit cream cake is cream. For the cream, you need to soak the gelatin in cold boiled water until it swells, for about 1.5 to 2 hours.
- Meanwhile, the cottage cheese, along with sugar, vanilla and cream, is interrupted in a blender. If you don’t have a blender, then you can simply grind the cottage cheese through a sieve.
- Tip. For cream, I take fat cottage cheese (at least 9%) and fat cream - at least 33%.
- Beat the cream until lush. Add the dissolved gelatin and continue whisking with a mixer.
- Tip. After the gelatin is swollen, it must be warmed up so that the gelatin granules “bloom”: that is, they turn into a homogeneous mass. This can be done in a water bath: only in no case bring the gelatin to a boil, otherwise it will lose its properties.
- When the cake layers have cooled and the cream is ready, collect the cake. You can just coat the cakes with cream, spreading it with a spoon. And you can do it beautifully - with the help of a pastry bag. The taste of the cake will not change, but outwardly it will be slightly different. Top can be decorated with crumble crusts or grated chocolate
