Sour cream pie with berries

Meet Shrovetide - prepare a sour cream pie with berries. Yes, yes, I didn’t make a reservation: in Russia, before the revolution, it was customary to make the table on Shrovetide with dishes (it is not for nothing that it is plentiful and wide). Particular preference was given to dishes of a round shape - similar to the sun (and this, as you know, is not only pancakes). Pie with berries and sour cream filling - an excellent dish on an Shrovetide table - golden, like a sun, decorated with berries (rays), awesomely tasty. And the smell is of the coming spring and the soon fragrant summer.

Ingredients:

  • 2 large eggs (or three small ones);
  • 1 cup of sugar;
  • 1 cup sour cream;
  • 0.5 cups of vegetable oil;
  • 2 cups of flour;
  • 2 teaspoons of baking powder;
  • 1 sachet of vanilla sugar;
  • 1 gram of salt;
  • 400-500 grams of berries (to taste);
  • 1 tablespoon of starch.

Sour cream pie with frozen berries. Step by step recipe

We will bake a pie with sour cream and berries in the oven. Therefore, immediately turn it on, let it warm up. Cooking sour cream fill does not take much time.

  1. Beat eggs with sugar, salt and vanilla sugar.
  2. Pour sour cream and vegetable oil into the egg mixture.
  3. Add (sifting through a sieve) flour and baking powder, mix with a wooden spatula. If the flour is not enough, then add a little more. The consistency dough should turn out like a charlotte (a little thicker than sour cream).
  4. We round off the round shape (I took it with a diameter of 22 centimeters) with parchment paper, grease it and the sides of the form with margarine.
  5. Spread half of the dough, distribute. We spread more than half of the frozen berries (mixed with starch). Add the second half of the sour cream filling and distribute the remaining berries on its surface, slightly pressing them with your hands. You can take any berries: strawberries, raspberries, currants (even apples) - it is winter now, so I used frozen ones. Fresh in the summer.
  6. Bake in a preheated to 180-200 degrees oven. Approximate time - 40-50 minutes (all individually, depends on the characteristics of your oven). We check the readiness with a toothpick (it should be dry).
  7. Sprinkle the finished sour cream pie on top with icing sugar.
