Superb baked cheesecake

The long-awaited bright berry - strawberries - already pleases us with its appearance and taste. And before opening the season of homemade preparations, let's first eat plenty of it fresh: after all, fresh strawberries are healthier and more necessary for our body. There are plenty of recipes for delicious desserts with strawberries, but this time I decided to cook an excellent cheesecake with strawberries without baking. The cake is unusual, but very tasty and healthy: the basis of crumbly cookies, the most delicate curd souffle and many, many berries of fresh strawberries are an overeating. Simple, fast, tasty and healthy!

Ingredients:

  • 200 grams of shortbread cookies;
  • 100 grams of butter;
  • 300 grams of low-fat cottage cheese;
  • 500 milliliters of fat cream (can be replaced with sour cream fat content above 20%);
  • 150 grams of granulated sugar;
  • 15-20 grams of gelatin + 100 milliliters of water;
  • one sachet (8 grams) of vanilla sugar;
  • 77 grams of jelly + 400 milliliters of hot water;
  • fruit (any) for decoration.

Excellent cheesecake without baking. Step by step recipe

  1. Pour gelatin with water (according to the recipe) and leave to swell for 10 minutes.
  2. Grind shortbread cookies in a blender or in a combine into small crumbs. If you do not have such a technique in the kitchen, you can use a regular rolling pin by placing cookies in a bag.
  3. In a bowl with crushed cookies, add softened butter (it needs to be taken out of the refrigerator about an hour before cooking and allowed to lie down at room temperature). Mix everything well until smooth.
  4. On a flat dish, put the top of the split baking dish (or a special ring), spread the base from the cookies. I have a ring diameter of 20 centimeters.
  5. Tamp the base layer with an iron for mastic (but you can also use the bottom of a regular glass).
  6. We send the form with the base in the refrigerator for 30 minutes, at this time we cook the curd souffle ourselves.
  7. In a deep dish we spread fat cream or sour cream, vanilla sugar and granulated sugar (all according to the recipe). Beat with a mixer until sugar is completely dissolved.
  8. We first wipe the cottage cheese through a sieve: it should be smooth, not granular, consistency.
  9. We send the mashed cottage cheese into a bowl with sour cream, in two stages, whisking well with a mixer.
  10. Ready-made curd souffle should be in consistency, like thick sour cream.
  11. We bring the swollen gelatin to readiness in the microwave, and then pour it into a curd souffle in a thin stream, without stopping beating.
  12. We take out the form with the base from the refrigerator, pour the curd souffle into it.
  13. Again we send the form to the refrigerator, but now for two hours.
  14. At this time, prepare the jelly: pour 400 milliliters of boiled hot water into a bowl. Add jelly to my water (I have strawberry) and mix well with a spoon.
  15. Strawberries, for decoration, cut into thin slices, lengthwise.
  16. Two hours later, we take the cheesecake out of the refrigerator (the souffle should have solidified well during this time), spread the sliced ​​strawberries (in the shape of a flower) on top.
  17. Pour strawberries with chilled jelly, a thin stream.
  18. Put the form with the cheesecake in the refrigerator for 5-7 hours, until completely solidified.
  19. From the finished jelly cake, very carefully remove the ring, if necessary, helping with a knife.
