  1. Grind 100 grams of soft butter with half a glass of sugar (you can use a blender), add one egg and half a glass of sour cream.
  2. Pour 2 cups of flour, a pinch of salt and soda, mix everything with a wooden spatula (not for long, the dough should not become tight).
  3. We wrap the finished dough in cling film and send it to the refrigerator for half an hour.
  4. While the dough is in the refrigerator, we begin to prepare the filling.
  5. In a bowl we spread 50 grams of cottage cheese rubbed through a sieve (the cottage cheese should not be too dry so that the filling does not diverge), pour 2 tablespoons of sugar, 1 tablespoon of semolina and flour, 2 tablespoons of sour cream and one whipped protein. You can add raisins, dried apricots, fresh berries or any berry jam to the curd mass - it will also be very tasty.
  6. Mix well - the filling is ready.
  7. Roll out the dough with a rolling pin, cut out circles with a bowl (or other dishes with a diameter of at least 12 centimeters) with a thickness of not more than 0.5 millimeters. We put 1 tablespoon of the curd filling on one half of the mug, close it with the second half of the dough, press it slightly with your hand.
  8. We spread the juices on a baking sheet covered with parchment paper (you can cover it with foil or a silicone baking mat), and grease with yolk.
  9. We bake in an oven preheated to 200 degrees for no more than 15 minutes (but it all depends on the quality of your oven). If you want the juices to be soft, take them out of the oven as soon as they brown. If you like crispy - hold it a little longer.

I want to offer you another recipe for juicy cherries, it is quite original, as the filling and dough is 2 in 1 (rather, stuff with cherry). In a deep bowl, mix a glass of seedless cherry jam and 1 teaspoon of soda. Leave to infuse for 10 minutes. Add there (after 10 minutes, of course) 1 cup of kefir, 2.5 cups flour, 2 eggs and half a cup of sugar. Cut tortillas with a thickness of not more than 0.5 millimeters, fold in half. Put on a baking sheet covered with parchment. Bake in a preheated oven to 200 degrees for 30 minutes.
