In addition, it is incredibly tasty: sweet, delicate, with a pleasant honey flavor of cakes, a refreshing orange cream and incredibly airy protein cream, which serves not only as a decor, but also as a great flavoring addition.


For shortcakes:

  • eggs - 2 pieces;
  • white sugar - 200 grams;
  • whole grain flour - 500-600 grams;
  • salt - a pinch;
  • baking soda - 10 grams;
  • butter - 60 grams;
  • liquid honey - 100 milliliters.

For orange cream:

  • eggs - 4 pieces;
  • sugar - 200 grams;
  • orange - 3 pieces;
  • butter - 200 grams;
  • potato starch - 50 grams.

For protein custard:

  • granulated sugar - 300 grams;
  • salt - a pinch;
  • citric acid - 0.5 teaspoons;
  • vanillin or vanilla extract - to taste;
  • water - 80 milliliters;
  • egg whites - 5 pieces;
  • food colors: yellow, green, black.

  1. First, prepare an orange cream for the Sunflower Cake. With well-washed and dryly rubbed oranges, remove the zest. How to do it right, look on our site “Very tasty”. From the fruit itself, squeeze out fresh orange juice through a juicer.
  2. Pour juice into a stewpan, shift the citrus zest and half granulated sugar. We put on the stove and bring to a boil.
  3. Separately, beat the eggs with the remaining sugar, gradually pour in the potato starch and knead well.
  4. Pour the hot orange-sugar mixture into the egg mass, quickly and thoroughly knead with a whisk until smooth.
  5. Again we send to the stove, set a moderate fire, and cook the orange cream for the gentle honey cake "Sunflower": until thickened.
  6. Grind the hot orange cream through a sieve. We shift the butter to it and mix well until it is completely dissolved. Then leave to cool.
  7. Cooking cake layers. In a wide container we mix eggs, melted honey, butter, granulated sugar and soda. In this recipe, you do not need to extinguish soda with vinegar.
  8. We send the well-mixed mixture to the steam bath: until all the ingredients are homogeneous.
  9. When heated, the mass brightens, becomes larger in volume. Gradually introduce half the pre-sifted flour.
  10. Then add the rest of the flour and knead our dough for honey cake well. It should turn out soft and elastic.
  11. We divide the dough into seven equal parts. We roll each piece into a cake (we cut out even cakes in shape) and bake on a baking sheet covered with parchment.
  12. Baking time - five minutes, the temperature in the oven - 180 degrees Celsius.
  13. We coat the baked cakes with orange cream and collect the “Sunflower” cake.
  14. Tip. If after baking your cakes are slightly deformed, they can be carefully trimmed again.
  15. We leave the impregnated cake for eight hours. Then we decorate, giving it the appearance of a flower of a sunflower.
  16. As a basis for decoration, we will use a protein custard. To do this, use a mixer to beat chilled proteins in a thick lush foam, with the addition of a pinch of salt.
  17. To sugar add a little for the taste of citric acid, vanilla extract and half water. Water should moisten all the sugar.
  18. We put sugar syrup on a moderate fire and cook until completely dissolved: about ten minutes.
  19. We still introduce hot syrup into proteins, without stopping whipping. When the cream doubles in volume, it is ready.
  20. We coat the top and sides of our cake with protein cream.
  21. We divide the remaining cream into three parts. One of them needs to be done more.

  23. Using a pastry bag, we first make leaflets for our sunflower from green protein custard. We make them from the bottom, going around the perimeter of the cake.
  24. Next we make the sunflower petals, from yellow cream. The middle is left blank.
  25. Having replaced the nozzle for the pastry bag and filling it with black cream, we make seeds for our Sunflower cake.
