I liked the fast, simple and most importantly delicious recipe so much that I rushed headlong into the store for the necessary ingredients. As soon as I tested my creation, I immediately decided to share the recipe on how to cook pistachio cheesecake. The cheesecake itself literally melts in your mouth and gives an unforgettable gentle taste of pistachios and chocolate. Ingredients:
The foundation:
- cookies "Jubilee" - 300 grams;
- butter - 40 grams.
Cream:
- cream cheese - 750 grams;
- sugar - 200 grams;
- eggs - 3 pieces;
- cream (30% fat) - 180 milliliters;
- pistachio flavoring;
- green dye.

- pistachios - 10-15 grams;
- chocolate glaze.

- We break the cookies and put it in a blender. You can take any other cookies to your taste or bake it yourself. The main thing is that the cookies are shortbread.
- Add the butter at room temperature.
- With a blender you need to grind cookies and butter to a homogeneous loose mass.
- We take the form and rub its bottom and walls with butter.
- It is best to take a detachable form so that the finished pistachio cheesecake can be easily pulled out of it. If the form is whole, then there is a high probability of damaging the cheesecake.
- Now lightly sprinkle the oiled form with flour. If excess flour remains, it can be removed.
- Tip. You can use regular parchment instead of butter. But as for me, the cheesecake holds up better if cooked in a greased form.
- Pour the base for the cheesecake to the bottom of the mold. Personally, this recipe does not require to make sides, so I cooked without them.
- Using the bottom of the glass, you need to tamp the base so that there are no lumps.
- We put the form with the base of the cheesecake in the refrigerator while we make the filling (for about 30 minutes).
- Take cream cheese and put it in a blender.
- Immediately add three eggs and two hundred grams of sugar.
- Pour the required amount of cream on top.
- Beat the mass with a submersible blender at low speeds.
- Add a little pistachio flavor to the whipped filling.
- To make the cream greenish, add a little green food coloring to adapt to the color of pistachios. I take the amount of dye per eye. I’ll focus on how saturated the color is.
