Lovers of sweets I propose to cook a real, most delicious Tatar "Chak-chak". Incredibly tasty, tempting appetizing honey treat, cooked at home, just melts in your mouth. Ingredients:

  • egg yolk - 6 pieces;
  • egg white - 3 pieces;
  • milk - 4 tablespoons (50 milliliters);
  • sugar - 2 tablespoons (36 grams);
  • flour - 420 grams;
  • soda - 1 teaspoon without a slide;
  • rice vinegar (apple) - 1 tablespoon;
  • salt - 0.25 teaspoon.

For roasting:

  • clarified butter - 25 grams;
  • odorless vegetable deodorized oil - 300-350 milliliters.

Honey syrup for one piece of Chuck Chuck:

  • natural honey - 100 grams;
  • granulated sugar - 100 grams.

The most delicious real Tatar "Chak-chak". Step by step recipe

  1. To prepare a delicious Tatar sweet, we need six egg yolks and three egg whites. We send everything to the mixer bowl.
  2. Then we add sugar, salt, pour 50 milliliters of milk, add soda, and beat everything well with a mixer until a homogeneous air mass is obtained.
  3. In a whipped mass, add one tablespoon of rice vinegar and mix well with a spatula.
  4. Tip. During the preparation of the popular Tatar sweets, apple cider vinegar can be used instead of rice vinegar.
  5. Add flour in small portions (according to the recipe) and mix thoroughly until the dough becomes thick.
  6. We put the rest of the flour on the table, spread the dough on top and knead it well with our hands. Knead the dough for the real "Chuck-chuck" until the dough has absorbed the remaining flour. The dough should turn out soft and not sticky to the hands.
  7. We divide the finished dough for Tatar sweets into three equal parts.
  8. Gentle dough is placed in a plastic bag and leave to rest for 20 minutes.
  9. In this time we will prepare the Chuck-Chuck oil for frying.
  10. Pour odorless vegetable oil into a cast-iron ladle, add 25 grams of melted butter (butter is needed so that the Tatar sweetness has a creamy aromatic taste).
  11. Tip: When frying the Chuck-Chuck, as soon as the butter begins to foam and sediment from the flour appears on the bottom of the pan, change the butter to fresh.
  12. We cover the colander with paper towels.
  13. We get one part of the test (out of three), divide it in half, send one half of the test back to the package.
  14. The second part of the dough is rolled out using a rolling pin into a layer with a thickness of 1.5-2 mm.
  15. Cut the rolled dough into strips 3-4 cm wide (I cut the dough with a pizza knife).
  16. We cut each strip of dough into strips: a width of 1.5-2 millimeters.
  17. We send the cast-iron ladle with prepared oil to the stove and warm it well.
  18. Boil Chuck Chuck in small portions.
  19. We transfer the finished sweets to the prepared colander with paper towels.
  20. Cover the bottom of the demountable mold with parchment paper (I used a mold with a diameter of 26 centimeters) and grease with butter.
  21. Put 100 grams of natural honey in a cast-iron dipper (if your honey is too thick, you can add a little water) and melt it in a water bath (or on a small fire).
  22. Add 100 grams of sugar to liquid honey, mix well and, with constant stirring, bring the sugar to complete dissolution.
  23. Pour half of the “Chuck-chak” with honey syrup, carefully, but gently, mix and put into the prepared form.
  24. Wet your hands in water and well crush the "Chuck-chak" in the form. With the second half we do the same.
  25. We leave the "Chuck-chak" in the form until ready for several hours.
  26. Then we remove the form, turn the finished Tatar sweets into a dish, remove the parchment.
