For the test:

  • 4 eggs;
  • 350 grams of sugar;
  • 220 milliliters of vegetable oil;
  • 350 grams of flour;
  • 400 grams of carrots;
  • 2 teaspoons of baking powder;
  • zest of 1 orange;
  • a pinch of cinnamon;
  • 200 grams of walnuts;
  • 20 grams of butter;
  • half a teaspoon of salt.

For cream:

  • 500 grams of cream cheese (cream cheese): 1 liter of kefir + 400 grams of sour cream;
  • 200 grams of powdered sugar;
  • 200 grams of butter.

An unrivaled carrot velvet cake. Step by step recipe

  1. The cream recipe uses cream cheese: it must be prepared in advance. Put a colander in a saucepan, cover with a natural cloth or cheesecloth, add kefir and sour cream there, mix and leave in the refrigerator overnight. Thus, on gauze or cloth, you will have cream cheese.
  2. Prepare the walnuts. First you need to fry them in a pan, then salt, add melted butter, mix everything and put in the freezer.
  3. Nuts will stand in the freezer while the dough is being prepared.
  4. We need to remove the zest from the orange: it needs to be washed and grated on a fine grater. Leave the zest in a separate bowl: we will add it to the dough.
  5. Prepare the carrots: wash, peel and grind in a blender (you can grate on a fine grater). Leave the chopped carrots in a separate bowl: we will add it to the dough.
  6. We proceed to the preparation of the test. With the help of a mixer, a kitchen machine or a blender, we begin to beat the eggs, add sugar, beat until fluffy and pour the vegetable oil.
  7. Continuing to beat the dough, we change the nozzle, and gradually pour in flour, baking powder, a pinch of cinnamon and orange zest.
  8. Also, gently add chopped carrots to the whipped dough. Mix all ingredients thoroughly with a spatula or spoon.
  9. We take walnuts from the freezer, pour them on the board and chop them with a knife. Add chopped walnuts to the dough and mix well. You can leave some whole nuts to decorate the cake.
  10. From the resulting test we will make three cakes. For this, the dough needs to be divided into three equal parts.
  11. We turn to baking cakes. We take a round shape with a diameter of 22 centimeters, put it on parchment, put the first part of the dough and bake at a temperature of 170-180 degrees, about twenty-five minutes.
  12. In the same way, bake two more parts of the dough.
  13. The readiness of the cake can be checked with a wooden stick or toothpick: if it does not have raw dough, then the cake has already been baked.
  14. When all three cakes are ready, you need to give them time to cool. The cakes are very soft and brittle: they need to be carefully wrapped in cling film (each cake is wrapped individually) and sent to the refrigerator for several hours.
  15. We proceed to the preparation of the cream. Using a mixer, beat the butter (the butter should be soft, so leave it first at room temperature or melt a little with the microwave), gradually add the powdered sugar, and then a little cream cheese (or it is also called cream cheese). Mix everything until smooth: the cream is ready.
  16. We take cakes from the refrigerator and, using a knife, remove very thin small tops: we will use them for crumbs. To make crumbs from the tops, you can use a knife or crumble with your hands.
  17. We proceed to the collection of cake. Cakes should be smeared with cream, and also grease the top and sides of the cake with cream.
  18. Sprinkle the sides of the cake and a little top with crumbs from the cakes, and carefully lay the walnuts in the center of the cake.
  19. The cake should be sent to the refrigerator for a couple of hours: brew.
