A wonderful mousse cake without baking is one of the most delicious treats, which is distinguished by its delicate taste and piquancy. Ingredients:
- cookies "Jubilee" - 220 grams;
- chocolate (dark) - 200 grams (50 grams per base, 150 grams per cottage cheese);
- milk - 40 milliliters;
- cottage cheese (fat) - 400 grams;
- butter - 100 grams;
- sugar - 180 grams;
- cream (33%) - 400 milliliters;
- gelatin - 25 grams;
- water - 80 milliliters;
- berries of fresh strawberries.
Wonderful mousse cake without baking. Step by step recipe
- Initially, we will prepare the basis for a wonderful cake without baking.
- Grind cookies “Jubilee” into small crumbs (for this we put cookies in a bag and grind it with a rolling pin).
- Tip: for a cake without baking, you can use any friable cookies.
- 50 grams of dark chocolate (from the general norm) are grated.
- Next, we need a container in which we will combine and mix all the ingredients (I have a deep bowl).
- In the prepared container we transfer the crumbs from the cookies and add the grated chocolate.
- Melt the butter in the microwave or in a water bath.
- Pour the melted butter into a container for crumbs and chocolate. Mix well.
- Next, we need a detachable mold with a diameter of 21 centimeters (but you can use a mold of another diameter).
- We shift the base into the form, evenly distribute and tamp well.
- Soak gelatin in cold water and leave to swell.
- Cottage cheese (for the mousse cake I used fat cottage cheese) is transferred to a separate container, add sugar, and we grind everything well using an immersion blender.
- The remaining chocolate (150 grams) is transferred to a small saucepan, filled with milk, sent to medium heat and stir constantly until the chocolate dissolves.
- We send the melted chocolate to the cottage cheese, we pierce everything well with a blender. The curd mixture for a wonderful cake without baking is ready.
- Melt the swollen gelatin in the microwave and leave to cool.
- Beat cold cream with a mixer (we start with a slow mixer speed and gradually increase it) to a steady state.
- Now let's mix cream and curd. We add the chocolate-curd mass in several stages to the cream, and mix everything at a slow mixer speed.
- The cooled gelatin (up to 40 degrees) is introduced into the curd mass in a thin stream and mixed at a low mixer speed. Curd cake ready.
- The sides of the form (in which the base is located) are lined with an acetate film.
- In the form on the base, send a couple of tablespoons of cream and evenly distribute.
- Then we lay out fresh strawberries (take the number of berries for the cake without baking at your own discretion), fill everything with the remaining cream mass and evenly distribute.
- A wonderful mousse cake without baking is sent to the refrigerator for three hours.
- When the cake hardens well, remove the detachable form and, if desired, decorate it with grated chocolate.
