Colored Chinese Dumplings

Ingredients:

For choux pastry:

  • flour - 150 grams;
  • hot water - 75 grams;
  • soda - half a teaspoon;
  • vegetable oil - 10-11 grams.

For spinach dough:

  • flour - 150 grams;
  • spinach juice - 75 milliliters;
  • salt - half a teaspoon;
  • vegetable oil - 10-11 grams.

For filling:

  • chicken fillet - 250 grams;
  • soft tofu - 130 grams;
  • 50 grams of green onions;
  • onions - 50 grams;
  • garlic - a tablespoon;
  • oyster or soy sauce - a tablespoon;
  • starch - a tablespoon;
  • sesame or vegetable oil - a tablespoon;
  • spices and salt to taste.

Colored Chinese dumplings. Step by step recipe

  1. Before cooking colored Chinese dumplings, you should prepare a white dough. To do this, pour salt in boiling water and stir until dissolved.
  2. Sift the flour through a sieve into a separate container, make a small hole in the center, and pour in some salt water.
  3. After we add the vegetable oil and begin to knead the dough: in a circular motion from the center to the edges. Then we begin to knead with hands. The dough is very elastic and tender. After kneading a little more on the work surface to medium density. We give the piece the shape of a ball, place it in a plastic bag and leave it for about 30 minutes: lie down at room temperature.
  4. Now I will tell you how to make colored dough for dumplings. It will be green for me, however, there are other color options (you can find ways to make them on the site “I like to cook”). The whole secret is spinach juice.
  5. So, add salt to the spinach juice (unlike the first test, you do not need to heat it) salt, and mix the consistency well so that the crystals dissolve as much as possible.
  6. Sift the flour into a working container, then make a hole in the center, pour spinach liquid and vegetable oil into it. Then we begin to knead with a spoon: as in the first version - from the middle to the edges.
  7. Then we knead with our hands until the dough completely becomes a uniform color, with perfect elasticity and smoothness.
  8. We take it to the working surface, knead for another minutes. Next, we form a ball and place it in a bag. Leave the dough to rest for 30 minutes at room temperature.
  9. Now consider the recipe for the filling for colored dumplings. We place the minced chicken in the working container (you can use any other).
  10. We take Tofu and squeeze the liquid out of it, then shift it to the minced meat.
  11. We take the feathers of green onions, rinse them and cut. After shifting to the filling.
  12. Next, we cut the onions very finely and pour them into the minced meat.
  13. Cut the red chili peppers into small rings (if it is big, then use the half so that the filling does not turn out too sharp), and also put in the minced meat.
  14. Using a special device, a grater or a meat grinder, grind the garlic, and season them with the filling.
  15. Pour lightly oil, pour oyster sauce. Season with black pepper and add salt. After that, mix everything well. Everything, the mince is ready.
  16. Now take our brewed dough. First, roll out the sausage white dough, we also do with a green slice. After the colored stick, we roll out a little with a rolling pin (about 10 cm). After we put the custard dough in the center and wrap it, fastening it in the center. Thus, in our country it appears in a green shell.
  17. We roll out the resulting tourniquet and cut it into identical pieces: about 1 centimeter.

  19. We do this with all pieces of dough. Better to steam them. Cover the double boiler with parchment, grease it with butter and put the dumplings. They cook for about 10 minutes.
  20. When ready, remove the dumplings and lightly grease them with oil so that they do not dry out.
