Delicious zucchini pancakes

The zucchini season begins, from which you can cook a lot of delicious and mouth-watering dishes: casseroles, pancakes, snack bars and cakes. But this time I recommend baking with me very delicious pancakes from zucchini with beetroot filling. Serve kefir pancakes with beetroot filling for dinner or a festive table - and everyone who tries will certainly ask for supplements.

Ingredients:

  • 300 milliliters of kefir;
  • 450 grams of young zucchini;
  • 4 chicken fresh eggs;
  • 350 grams of flour;
  • 1 tablespoon of vegetable oil;
  • 2 tablespoons of parsley;
  • 1 teaspoon of salt;
  • 0.5 teaspoon of soda;
  • butter for greasing pancakes.

For filling:

  • 400 grams of beet peeled in a peel;
  • 150 grams of pickled champignons;
  • 4 cloves of garlic;
  • 100 milliliters of mayonnaise;
  • salt and black pepper to taste.

Delicious zucchini pancakes. Step by step recipe

    1. Zucchini (it is better to use young, with a delicate skin) wash and, without cleaning, rub on a fine grater. We squeeze out the excess liquid.
    2. We beat in the eggs, add salt, pour in the kefir and mix well. It is very convenient to mix all the ingredients with a regular fork.
    3. Grind fresh parsley and send it to a bowl with zucchini mass.
    4. Pour flour in parts (previously sifted), mixing well each time. It should not be a thick dough (like pancakes).
    5. Pour a tablespoon of vegetable oil, do not forget to mix.
    6. Pour the last soda, mix and leave the dough from the zucchini for 20 minutes.
    7. While the zucchini dough is infused, we prepare the filling of beets and mushrooms.
    8. We clean the beets (it is better to boil them in advance, in the peel) and rub them on a fine grater. Squeeze the juice.
    9. From the pickled champignons, drain the juice, finely chop with a knife, send to a bowl for beets.
    10. Pass the garlic through the press into beets, salt and pepper to taste.
    11. Add mayonnaise, mix everything well with a spoon.
    12. Tip. Beet and mushroom filling is also suitable for any other unsweetened pancakes.
    13. We leave the filling to infuse, and ourselves at this time fry the pancakes.
    14. We lubricate the hot pan with vegetable oil (it is very convenient to use a silicone brush), pour the zucchini dough with a ladle, and form a pancake.
    15. Fry pancakes from zucchini on both sides until golden brown.
    16. We transfer ready-made pancakes from zucchini to a plate in a stack, lubricating each with melted butter.
    17. Squash pancakes are greased with beetroot filling and wrap in any convenient way.
