  • zucchini - 400-500 grams;
  • eggs - 1-2 pieces;
  • onions - 30-50 grams;
  • flour - 2 tablespoons with a slide;
  • salt, pepper, dill, parsley - to taste;
  • vegetable oil for frying.

For cream:

  • processed cheese - 1 piece (90 grams);
  • garlic - 3-4 cloves;
  • mayonnaise - 2-3 tablespoons
  • tomatoes - 1-2 pieces.

  1. If you have young zucchini, which have a very soft skin, then you can not clean it. In another case, it is better to cut it off. If there are large seeds in the middle, they also need to be removed.
  2. Rub the zucchini on a coarse grater, put in a bowl. Also add the grated onion (I rub it on a fine grater, and you can use any, according to your desire).
  3. Season with salt (I throw 0.5 teaspoon) and mix. Transfer to a sieve and leave for 10-15 minutes so that they let the juice.
  4. Well squeeze the grated zucchini with our hands to remove excess liquid, and put it back in a bowl. If desired, you can add chopped dill, season with ground pepper.
  5. We beat in 1 large or 2 small eggs, add the flour, and mix everything well. If necessary, add salt.
  6. Fry zucchini fritters on heated vegetable oil on both sides. Try to make them not too thin: 0.7-1 centimeter will be just right.
  7. Step-by-step preparation of the filling: grate the cream cheese, add the garlic, passed through the press, mayonnaise, and mix everything. Since mayonnaise and processed cheese are different for everyone, you can adjust the exact amount of mayonnaise yourself. As a result, the mass should turn out like a cream so that you can spread pancakes.
  8. Tomatoes are cut into rings, a thickness of approximately 0.7 centimeters.
  9. We collect zucchini cake: grease the pancakes well with cheese cream, cover with the second and also apply the second layer of cream, spread the tomato on top. You can decorate zucchini cake with a small ball of cheese cream and a sprig of dill or parsley.
