  • beef - 1 kilogram;
  • veal - 500 grams;
  • potatoes - 2 pieces;
  • salt to taste;
  • allspice - to taste;
  • garlic - 1 head;
  • flour - 700 grams;
  • eggs - 2 pieces;
  • bay leaf - 2 pieces;
  • black peppercorns - 10 peas;
  • water - three liters.

Awesome Chechen dumplings. Step by step recipe

  1. First, prepare the meat. You can use any meat except pork, as the dish is Muslim. I took beef slices from the ribs and calf washers from the legs. Rinse the meat under running water.
  2. We put the meat in a pan, pour cold water. We need a lot of broth.
  3. Add bay leaf, peppercorns and salt to taste. We put the pan on the stove. When the broth boils, remove the foam. And on low heat we continue to cook meat until cooked.
  4. While the meat is cooked, we can do the dough.
  5. Prepare a bowl for the test. Sift flour through a sieve. In the center we make a deepening, add eggs and a pinch of salt there. Add water and knead the dough: first in a bowl, and then go to the table. Sprinkle the table with flour before this. Continue to knead for about 5 minutes. The dough should be elastic. We place the dough back in a bowl, cover with a lid or cling film, and let stand for 20 minutes.
  6. After 20 minutes we take out the dough. Divide it into two parts. Sprinkle the table with flour and roll the dough into a not-so-thin layer: about 6-7 millimeters thick.
  7. With a sharp knife, cut the dough into stripes with a width of 3 centimeters. Next, cut each strip into strips: already 1-1.5 centimeters wide.
  8. Sculpt the dumplings: put a strip on the palm of the hand, push the fingers along the length and stretch along the palm. In this way, you can sculpt on the table. We put the finished Chechen dumplings on a tray sprinkled with flour.
  9. Recall that we have also cooked meat, take it out on a plate, and strain the broth so that pepper does not come in with peas.
  10. We pour a little broth into the bowl. And to the remaining broth we add a little water, salt and bring it to a boil.
  11. We throw dumplings into the boiling broth, stir so that they do not stick together and do not stick to the bottom of the pan. We are waiting for the dumplings to boil.
  12. We clean the potatoes, wash them and boil them. You can boil it with meat, or you can separately.
  13. Prepare the sauce. Knead the cooled potatoes with a fork. We clean the garlic and pass it through the press. Add the broth, which we cast into the bowl. Sprinkle with black pepper and the sauce is ready.
