For the sauce:

  • lamb or beef pulp - 500 grams;
  • onions - 500 grams;
  • garlic - 8 cloves;
  • vegetable oil - 120 grams;
  • salt - 1 teaspoon;
  • zira - 1 teaspoon;
  • ground black pepper - 1 teaspoon;
  • tomato paste - 100 grams.

For frying:

  • eggs - 1-2 pieces;
  • salt;
  • vegetable oil.

  1. First we will make the dough. To do this, pour water into a small bowl, add salt to it and break one egg. Mix well.
  2. Sift the flour into a mixer bowl and pour our water-egg mixture into it.
  3. At low speed, you need to knead a cool dough. If you do not have the opportunity to use a mixer, you can knead with your hands.
  4. When the dough is ready, cover it with any empty bowl and leave at least half an hour.
  5. Thirty minutes later, roll the dough into a layer 2 mm thick and cut the noodles. You can use a special machine for cutting noodles, or you can do it manually. It is not necessary to use such a noodle recipe. You can take any other, for example, without eggs. Or you can just buy any pasta if you don't want to mess with the dough.
  6. Ready noodles should be put in a pot with salted boiling water and cook until cooked.
  7. When the noodles are cooked, you need to throw it in a colander and rinse in cold water. Add 10 g of vegetable oil and mix.
  8. Now make the sauce. Take the flesh of lamb or beef and cut into small cubes (0.5-1 cm).
  9. We take a pound of onion, clean, wash. Cut into small cubes or thin half rings.
  10. Finely chop the garlic. To do this, take a wide knife, squeeze the tooth into the side, cut it into several strips, and them into small cubes.
  11. Now we need a cauldron or a pan with a thick bottom. Pour vegetable oil there, pour onion and fry it until golden brown.
  12. Add meat, fry with onions, stirring occasionally.
  13. Salt, add cumin, black pepper, mix well.
  14. Now add the tomato paste or 350 grams of finely chopped fresh tomatoes.
  15. Pour garlic, mix again and remove to the side.
  16. Take half the noodles and half the sauce. Cooking fried lagman.
  17. In a bowl, break one or two eggs, a pinch of salt and beat until a foam appears on the surface.
  18. Put the pan on the fire, heat the vegetable oil and pour the egg mixture, cook the omelet.
  19. Finished omelet should be cut into small pieces. And again we send it to the pan. Add half of the whole noodles to it, fry and add half the sauce. Stir constantly. You need to fry for 5-7 minutes.
  20. Serve on a large beautiful dish. Sprinkle finely chopped greens on top. Fresh vegetables can be served at the lagman.
