  • a couple of cloves of garlic;

Homemade ham. Step by step recipe

  1. Chicken fillet cut into small pieces.

  3. Now we need to combine meat, dry gelatin, garlic, Italian herbs. And add spices to taste. I usually add salt and black pepper.
  4. Mix all this mixture well and leave for 20 minutes.
  5. Take a baking sleeve and put the meat. We knit a sleeve on both sides.
  6. Then we take a tin can (from under canned pineapples, peas or corn) and put a sleeve with meat in it. There is one very important point. The sleeve must be well tamped in a jar.
  7. We send to the oven at a temperature of 190 degrees for 50 minutes.
  8. We send the ready, cooled ham overnight to the refrigerator.

The taste of homemade ham is simply divine. I want to say that once I tried to make ham in the same way, only from pork, it also turned out very tasty.

Now let's give a recipe for Light Ham from Chicken Breast and Lean Pork. It turns out homemade ham low-fat, low-calorie and super tasty.


  • Chicken Breast - 600 gr
  • Pork - 635 gr
  • Salt - 10 gr
  • Nitrite salt - 11 g
  • Water - 120 gr
  • Ground coriander - 3 gr
  • Nutmeg - 2 g
  • Ground black pepper - 2 gr
  • Sugar - 3 gr
  • Garlic - 3 cloves.

We cook in ham and with nitrite salt.

Ham at home. The recipe for the steps:

  1. We take the meat in equal proportions and finely cut into pieces. Weigh the bowl of meat to calculate how much salt to add. For every kg of meat you need 17 grams of salt.
  2. We send the curing mixture to the meat, add 10% of the total meat.
  3. Knead the meat, the water begins to be immediately absorbed into the meat. I will salt for about 3 days, and then add spices, this is necessary so that the meat does not sour.
  4. The meat has absorbed moisture, now cover it with cling film and put in the refrigerator.
  5. After 3 days, take out and add spices: 3 squeezed cloves of garlic, 3 grams of ground coriander, 3 grams of granulated sugar, 2 grams of nutmeg, a pinch of chili pepper and knead.
  6. The meat has become sticky and sticky. In the ham we put the baking bag and send the minced meat for the ham, thoroughly put it in the morning so that the minced meat is well laid down and there are no voids.
  7. Spread all the ham. You can bake instead of ham, first form the shape of ham.
  8. We cover the baking bag, close the ham, cover it with a bag, put it in the multicooker bowl, fill it with cold water and cook the ham at a temperature of 70 degrees for 5 hours.

  10. We get it, cool it with cold water for 20 minutes, and then in the refrigerator and leave it in the morning.
