Liver pancakes
From childhood, I loved how my mom cooks liver pancakes - they turned out to be very tender, straight air. And what a delicious filling she wrapped in these pancakes! Not an appetizer, but an ideal! Ingredients:
- chicken liver - 0.5 kilograms;
- milk - 150 grams;
- onions - 1-2 pieces;
- eggs - 3 pieces;
- flour - 3-4 tablespoons;
- salt - 0.5 teaspoon
- butter - 70-100 grams;
- sunflower oil for frying.
For filling:
- carrots - 2 pieces;
- mushrooms - 300 grams;
- processed cheese "Friendship" - 2 pieces;
- mayonnaise - 3-4 tablespoons;
- salt, pepper, herbs - to taste.
Liver pancakes. Step by step recipe
- Wash the liver, remove the film, pass along with the onion through a meat grinder. To make the dough even softer, I whisk additionally with a blender.
- Add the sifted flour, eggs, milk, soft butter, salt and again beat well with a blender. You will see how the mass grows in volume.
- Cover with foil and leave for 15 minutes.
- After frying pancakes in a pan with a small amount of vegetable oil.
- For the filling: grate the carrots and simmer in a small amount of water and vegetable oil until soft, so that they languish.
- Cut the mushrooms into small pieces (preferably straws) and fry until cooked, salt, add spices.
- Grate the cream cheese, mix with carrots, mushrooms, add mayonnaise, salt, spices, herbs to taste and mix well.
- Put the filling on the pancakes, roll and roll in the refrigerator for an hour, so that they freeze.
- Before serving, cut the pancakes with small washers and put on a plate.
