- turkey neck - 1 piece;
- chicken leg - 2 pieces;
- onion - 2 pieces;
- carrots - 2-3 pieces;
- salt, bay leaf, peppercorns;

Meat aspic. Step by step recipe
- Chop the neck into small pieces of 7-10 centimeters, leave the ham whole, soak in cold water for 2-3 hours, ideally overnight.
- Fold in a saucepan, pour water, put on fire, as soon as it begins to boil, immediately drain.
- Peel the carrots and onions, leave whole. If a large carrot, then you can cut it several times.
- Pour meat and vegetables with new water, bring to a boil, reduce heat to a minimum and simmer for 2.5-3 hours - so that the bones give their gelatin to the maximum and the broth remains transparent.
- Half an hour before turning off add salt, bay leaf, pepper.
- Before removing from heat, the meat should easily lag behind the bone.
- Cook chicken legs along with the main jelly, but not all the time, otherwise they will creep. Check that they are ready and take out.
- You can also lightly roast the legs for a greater blush.
- Remove the aspic from the fire, leave to cool.
- Separate the meat from the bones, put it in a form for hardening, put chicken legs on top.
- Soak gelatin for swelling, pour warm broth, put in a water bath until completely dissolved.
- Add liquid gelatin to the broth, stir, pour meat. Add gelatin, if necessary, if you have enough rich broth for solidification, then you can without gelatin.
- From boiled carrots, cut the scallop and beak, decorate the legs. We make the eyes of our males out of pepper peas.
