  • 2.5 cups (approximately 500 grams) of flour.

Thin pancakes in milk with mineral water. Step by step recipe

  1. In a deep dish, mix with a whisk (but you can also use a mixer) milk, sugar, salt, eggs and vegetable oil.
  2. Add about half a glass of mineral sparkling water (it plays the role of baking powder in the pancake dough).
  3. With constant stirring, we begin to introduce flour (about 2.5 cups, but it is important to watch: the dough should turn out to have the right pancake consistency, but not very liquid).
  4. Be sure to let the dough stand for at least 30 minutes, so that the remaining lumps dissolve and gluten seizes - so the pancakes will be tender, uniform, strong.
  5. Before baking the first pancake, so that the dough does not stick during the baking process, we heat the pan with vegetable oil to a haze. Drain the oil - and the pan is ready to bake pancakes (oil seals all chips and cracks, pancakes do not stick).
  6. Pour the dough into a pan with a ladle and evenly distribute, fry over high heat. Before taking the next portion, mix the dough thoroughly.
  7. To prevent the pancake from turning over, first bend the edges with a knife or spatula and then turn it over (I used to do it with my hands).
