Today I want to share one recipe that I learned when I was visiting my grandmother in the village, as usual the tables were crammed with plenty of food, but the attention of all those present was attracted by a dish called pork side, it was baked in the oven and looked so delicious and ruddy that it was impossible there was no try.


  • pork side - 1.5 kilograms;
  • spices (rosemary, coriander, black pepper, nutmeg, mustard seeds) - to taste;
  • salt - 10 grams;
  • cling film;
  • honey.

  1. Be sure to look at our pork barrel when buying, meat should alternate with lard.
  2. Rub abundantly with spices and salt, wrap and leave for 24 hours in a cool place.
  3. Next, we wrap the roll in cling film and send to cook for 3 hours.
  4. After that we take it out, cool it, remove the film, make cuts on the skin in the form of a net, tie it with a thread to keep it in shape.
  5. We will anoint it with honey and send it to the oven for half an hour, at a temperature of 190 degrees until golden brown.
  6. The dish is ready!
