Sweet Potato Stuffed with Beans

  1. Wash the sweet potatoes thoroughly and peel them. Pierce with a toothpick or fork in some places and send in the oven preheated to 220 degrees for 20 minutes.
  2. While the sweet potato is being cooked, let us heat the olive oil in a saucepan and add chopped onion, pepper, season with spices, salt and simmer for 3 minutes.
  3. Add the chopped diced tomatoes and beans to the stewed onion and pepper. Continue to simmer another 20 minutes, stirring constantly.
